Pasta e Fagioli

Yield: 4-6 servings

2 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
8 cloves garlic, finely chopped
1 tsp oregano
1 tsp thyme
1 tsp red pepper flakes
salt and pepper, to taste
1 lb ground beef
2 tbsp tomato paste
6 cups beef broth
24 oz marinara
1 can white beans, drained and rinsed
1 bay leaf
1 parmesan rind
1 cup ditalini pasta
2 cups kale leaves, ribs removed, finely chopped
juice from 1/2 lemon

1. In a large soup pot, heat oil over medium heat. Add the onion, carrots, celery and cook, stirring often, until the veggies start to soften.
2. Season with salt, pepper, oregano, thyme, and red pepper flakes.
3. Add the garlic and cook for another 30 seconds.
4. Clear a center in the pot and add the ground beef. Season with more salt and pepper, and cook until browned, breaking it up as it cooks, about 5-7 minutes.
5. Stir in the tomato paste and cook for another 1-2 minutes to caramelize it slightly.
6. Add the broth, marinara, beans, bay leaf, and parmesan rind. Stir everything together, bring to a boil, and then lower to a simmer for about 30 minutes, uncovered, stirring occasionally to develop the flavors.
7. After 30 minutes, add the ditalini pasta and cook for 8-10 minutes, until al dente.
8. Add the chopped kale and let cook for another 2 minutes.
9. Stir in fresh lemon juice to taste, adjusting seasoning with more salt and pepper if needed.

Tortellini Soup

Yield: 6 servings

2 tbsp olive oil
1 onion, diced
2 carrots, small dice
2 celery stalks, small dice
6 cloves garlic, minced
1 tbsp Italian seasoning
1/2 cup sun-dried tomatoes, diced
6 cups vegetable stock
1 can diced tomatoes
2 tbsp tomato paste
1 can cannelloni beans, divided
1 package tortellini
seasonal greens, such as kale or spinach, roughly chopped
parmesan cheese (optional)

1. Heat oil in a large pot over medium heat. Add onion, carrot, celery, garlic, sun-dried tomatoes and Italian seasoning. Saute until the onions are translucent, approximately 5 minutes.
2. Add broth, tomatoes and tomato paste. Stir together until everything is incorporated. Bring to a boil, then reduce heat and let simmer for 10 minutes.
3. Place half the beans into a blender with 1/4 cup water. Blend until smooth. Add to soup.
4. Add remaining beans, tortellini, and greens. Simmer for 5 more minutes until greens have wilted and tortellini is cooked.
5. Serve immediately, topping with grated parmesan cheese.

Lamb Rogan Josh

Yield: 6 servings

Curry Paste:
1 red bell pepper
2 cloves garlic, peeled and roughly chopped
1-inch piece of ginger, peeled and roughly chopped
1/2 bunch cilantro
1 red chile
2 tbsp tomato paste
3 tbsp olive oil
1 tbsp paprika
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1 tsp ground turmeric
salt and pepper, to taste

Curry:
1 tbsp olive oil
1 onion, thinly sliced
1-inch piece of ginger, peeled and finely chopped
1 red chile, thinly sliced (seeded if you prefer less heat)
2 bay leaves
2 lbs lamb stewing meat, cut into 1-inch cubes
salt and pepper
1/2 batch of curry paste
1 tbsp balsamic vinegar
1 can diced tomatoes
3 cups stock or water
juice of 1/2 lemon
1/2 bunch cilantro leaves, roughly chopped
plain yogurt, for serving

1. Make the curry paste first. Preheat the broiler or grill to high. Broil or grill the red bell pepper until charred on all sides.
2. Place the blackened pepper into a small bowl, and cover with plastic wrap. Set aside for 15 minutes.
3. Rub off the charred skin. Pry open the pepper and pull out the seeds. Slice into thick strips.
4. Place the peppers and remaining curry paste ingredients into a food processor. Blitz to a smooth paste.
5. Set aside half of the curry paste to use now and save the other half for another use.
6. To make the curry, place a large Dutch oven or heavy pot on medium-high heat. Add olive oil. When hot, add onion, ginger, chile, and bay leaves, and cook until softened, about 10 minutes.
7. Add the lamb, and season with salt and pepper to taste.
8. Add the curry paste and balsamic vinegar. Cook, stirring frequently, for a couple of minutes.
9. Add the tomatoes and stock. Bring to a boil, cover, and reduce heat to medium-low. Simmer for 1 hour, stirring occasionally.
10. Stir in the lemon juice and cilantro and season with salt and pepper to taste.
11. Serve with a spoonful of yogurt.

Tempeh and Potato Curry

Yield: 4 servings

8 oz tempeh
1 cup diced tomatoes
2 tbsp tomato paste
1 tbsp lime juice
1 tbsp coriander
1 tbsp sesame seeds
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp paprika
1/2 tsp red pepper flakes
1/4 tsp fenugreek
1/4 tsp garam masala
salt and pepper
1 tbsp coconut oil
1/2 medium onion, chopped
4 cloves garlic, minced
1/2-inch ginger, grated
1 potato, cubed
1 can coconut milk
cilantro and lemon for garnish

1. Steam the tempeh for 12 minutes. Set aside.
2. In a blender, combine tomato, tomato paste, lime juice, and all spices and seeds. Blend until smooth.
3. In a large pot, heat the oil over medium heat. Add onion, garlic, ginger, and a good pinch of salt, and cook until translucent.
4. Crumble the steamed tempeh and add to the pot. Cook for a minute to brown some edges.
5. Add the blended tomato and spice mixture. Mix well and cook over medium heat until the sauce is drying out and sticking to the tempeh (around 7 to 10 mins).
6. Add the potato and coconut milk. Mix well to incorporate, cover and cook for 15 minutes or until the potatoes are cooked through and the sauce has thickened a bit.
7. Garnish with cilantro and a dash of lemon. Serve with flatbread, naan, or rice.
8. The dish will keep in the refrigerator for up to 3 days.

Southwest Black Bean Stew

Yield: 4-6 servings

1 tbsp olive oil
1 onion, chopped
3-4 cloves garlic, minced
6 crimini mushrooms, sliced
1 potato, diced
1 yam, diced
1 red bell pepper, chopped
1 tbsp chili powder
1 tbsp oregano
2 tsp cumin
salt and pepper
1 can diced tomatoes
1/3 cup tomato paste
1 cup water
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 cup corn kernels
4 cups collard greens, coarsely chopped (or sub other greens)
1 cup loosely packed cilantro, chopped (plus extra for garnish)
avocado, chopped

1. In a large pot, heat olive oil over medium-high heat. When hot, add onion, garlic, and mushrooms, and cook while stirring for 5 to 8 minutes.
2. Add the potatoes, yam, red pepper, and spices. Cook while stirring for another couple of minutes.
3. Add the tomatoes, tomato paste, and water. Bring stew to a boil, then reduce heat to medium-low, cover, and cook for 15 minutes, stirring once or twice.
4. Add the beans and corn and cook for 5 more minutes.
5. Stir in the greens and cook for 5 minutes more, or until the potato and yam are tender.
6. Stir in the cilantro, and garnish with more chopped cilantro and chopped avocado.

Chicken Biryani

Yield: 4 servings

Rice:
300g basmati rice, cooked and cooled

Marinade:
600g chicken thighs, cut into bite-size pieces
3 tbsp greek yogurt
4 cloves garlic, finely minced
1-inch ginger, finely minced
1 tsp ground coriander
1/2 tsp turmeric
1/4 tsp chilli powder
1/4 tsp garam masala
salt and pepper

Sauce:
3 tbsp coconut oil (or ghee)
4 green cardamom pods
1 tsp cumin seeds
200g onion, thinly sliced
160g tomatoes, roughly chopped
1 tbsp tomato paste
2 bird eye green chillies, slit lengthwise

Garnish:
pinch of saffron
1/4 cup raisins
2 tbsp mint, roughly chopped
2 tbsp cilantro, roughly chopped

1. In a large bowl, combine all the marinade ingredients. Let sit for 20 minutes or overnight.
2. In a large pot, heat the oil over medium heat. Add the cardamom and cumin and fry for a few seconds.
3. Add the sliced onion and cook for 5 to 6 minutes.
4. Add the chopped tomatoes. Cook, stirring well, for 3 minutes. Mash with the back of the spoon as they soften.
5. Add the tomato paste and continue to cook for another minute.
6. Add the slit chillies and cook for one minute.
7. Add the marinated chicken and cook for 3 to 4 minutes to seal the chicken pieces. Season to taste. Lower the heat and simmer with the lid on for 5 minutes. Stir the chicken half way through cooking. Add 2 to 3 tbsp water if chicken starts sticking.
8. Remove from heat. Place half the rice over the chicken, followed by half the garnish ingredients. Layer the remaining rice, followed by the rest of the garnish ingredients.
9. Cover and return to stove over low heat. Cook for 5 minutes. Turn the heat off and let rest for 10 minutes.
10. Serve warm with cucumber raita.

Chorizo and White Bean Cassoulet

Yield: 4 servings

1 tbsp olive oil
4 links chorizo, cut into chunks
1/2 onion, diced
1 carrot, diced
1 stalk celery, diced
3 cloves of garlic, finely minced
1 small can diced tomatoes
1 tbsp tomato paste
3 cups chicken stock
1/4 cup white wine
1/2 tsp cayenne pepper
1 tsp thyme
1 tsp oregano
1 tsp smoked paprika
4 cups of spinach, chopped (or chard or kale)
1 can cannelloni beans, drained and rinsed

1. In a large pot, heat the oil over medium heat. Add the chorizo and let the chunks brown on each side. Remove from heat and set aside.
2. To the same pot, add the onion, carrot, and celery, and sauté for about 10 minutes, until just browning.
3. Add garlic and sauté another minute.
4. Add the tomatoes, tomato paste, chicken stock, white wine, and spices. Add the browned chorizo back to the pot. Bring to a boil and reduce heat to low. Simmer 15 minutes uncovered.
5. Add the spinach and beans and stir to wilt spinach and warm beans.

Braised Chicken with Artichokes and Olives

Yield: 4-6 servings

2 kg chicken pieces
8 cloves garlic, thinly sliced
1 cup white wine
1/4 cup olive oil, divided
1 tsp thyme leaves
1 tbsp tomato paste
1 tsp herbes de Provence
1 tbsp fennel seeds
2 cups chicken stock
6 plum tomatoes, halved
1 stalk celery, finely diced
1 onion, diced
1 small jar artichoke hearts, drained
1/2 cup pitted green olives

1. In a large bowl, combine chicken with add the garlic, wine, 2 tbsp oil, and thyme. Season with salt and pepper, and mix until completely coated. Cover and chill for at least a few hours, but preferably overnight.
2. In a large Dutch oven, heat 1 tbsp oil over medium-high heat. Scrape marinade off the chicken pieces back into the bowl. Fry the chicken in batches until the skin is golden and crisp. Remove the chicken from the pan and pour off the oil.
3. Place the pan back on the heat, and add the tomato paste, herbs, fennel seeds, chicken stock, tomatoes, and remaining marinade. Bring to a boil, then simmer gently for 20 mins.
4. Preheat oven to 325F.
5. Nestle the chicken pieces back into the dish. Scatter over the celery, onions, and artichokes. Bring up to a simmer, pop the lid on, then transfer to the oven and cook for 1 hour.
6. Remove the lid and stir in the olives. Season to taste and leave everything to settle for 15 mins before serving straight from the dish.

Lasagna

Yield: 8 servings

Sauce:
1 tbsp olive oil
1 lb sweet (or hot) Italian sausage
1 lb lean ground beef (or ground turkey)
1 onion, finely chopped
5 cloves garlic, crushed
1 tsp fennel seeds
1 tsp dried basil
1 tsp dried oregano
salt and pepper
1 large can crushed tomatoes
1 can tomato paste
2 jars tomato sauce

Ricotta Mix:
1 1/2 cups ricotta
2 eggs
1/2 cup spinach, chopped
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
2 tbsp mozzarella, grated
1 clove garlic, minced
salt and pepper

To assemble:
1 pound lasagna noodles
2 cups spinach, chopped
1 lb mozzarella, grated
1 cup four cheese mix, grated
1/4 cup Parmesan, grated

1. In a large pot, heat olive oil over medium heat. Add meat and cook until completely cooked through. Set aside, but do not drain the fat.
2. Add onion and garlic and cook for 5 minutes, or until softened.
3. Add spices and stir. Cook for another minute.
4. Add crushed tomatoes, tomato paste, and tomato sauce. Stir well and bring to a simmer. Reduce heat to low and simmer for 1 to 3 hours, stirring occasionally.
5. Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 5 minutes, then drain and discard water. Noodles should be pliable but still crunchy inside.
6. In a small mixing bowl, combine ricotta with eggs, spinach, basil, parsley, mozzarella, garlic, salt, and pepper. Refrigerate until ready to assemble lasagna.
7. Preheat oven to 375F. Lightly grease a deep aluminum 9x13 roasting pan.
8. To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/2 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese and 1/2 the spinach. Place 4 noodles on top. Spoon 2 cups meat sauce over noodles. Place 4 noodles on top. Spread remaining ricotta mixture on top of noodles. Top with 1/4 of four cheese mix and remaining 1/2 of the spinach. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella, four cheese mix, and Parmesan cheese. Cover loosely with aluminum foil.
9. Bake in preheated oven for 45 minutes. Remove foil, and bake an additional 25 to 30 minutes. May need to broil at the end to allow cheese to brown. Serve hot.

Beef Barley Soup

Yield: 4-6 servings

1 lb beef cubes
salt and pepper
(optional: 1/4 cup all-purpose flour)
2 tbsp olive oil
1 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1 tsp oregano, chopped
1 tsp thyme, chopped
3 tbsp tomato paste
4 cups beef broth
2 cups water
3/4 cup barley
1 tbsp parsley, chopped

1. Season the beef cubes generously with salt and pepper. If using flour, place the beef in a ziploc bag and add the flour to the bag. Close the bag and shake all the beef is fully covered in flour. Add more flour if needed.
2. In a large pot, heat olive oil over medium-high heat. In batches, add the beef and cook just until the meat starts to brown. Remove the meat from the pot and set aside.
3. In the same pot, add the onion, carrot, and celery. Cook the vegetables about 5 minutes, stirring occasionally.
4. Add garlic, oregano, thyme, and tomato paste. Stir.
5. Add the meat back to the pot, along with the beef broth and water. Bring to a boil, then reduce heat to medium and simmer for about 45 minutes, stirring occasionally, until the beef becomes tender.
6. Add the barley and cook for another 30 minutes or until the barley is cooked through. Be sure to stir occasionally to keep the barley from sticking. If the soup is too thick, add more water as necessary until you get the desired consistency.
7. Garnish with fresh parsley before serving.

Hearty White Bean Soup

Yield: 4-6 servings

1 tbsp olive oil
1 onion, diced
2 carrots, diced
2 celery stalks, diced
1 leek, diced
2 cloves garlic, finely chopped
2 tbsp tomato paste
1 can diced tomatoes
6 cups vegetable broth
2 sprigs fresh thyme
1 cup diced butternut squash
2 kale leaves, ribs removed, finely chopped
1 can white beans, drained and rinsed
salt and pepper, to taste

1. In a large soup pot, heat oil over medium heat. Add the onion and cook, stirring often, until the onion starts to soften.
2. Add the carrots, celery, and leeks. Continue cooking, stirring often, for about 5 minutes.
3. Add the garlic and cook for another 30 seconds.
4. Add the tomato paste, diced tomatoes, broth, thyme, and butternut squash. Bring to a simmer and let cook for about 15 to 20 minutes, or until the squash is tender.
5. Add the chopped kale and let cook for another 2 minutes.
6. Add beans, and season with salt and pepper.
