Red Curry Noodles with Chicken

Servings: 2-3

1 tbsp olive oil
1-2 cloves garlic, minced
2 tbsp red curry paste
3/4 lb boneless chicken, cut into pieces
salt and pepper
1 red bell pepper, sliced
1 can coconut milk
2 cups chicken broth
2 tsp turmeric (or curry powder)
optional: 1 tsp chili flakes
2 tbsp tamari (or soy sauce)
1 tsp maple syrup (or honey)
2 cups egg noodles
juice of 1 lime
1 shallot, coarsely chopped
1/4 cup cilantro, chopped
2-3 stalks green onion, thinly sliced

1. In a large skillet, heat olive oil over medium-high heat. Add garlic. Stir in red curry paste. Cook for 1 minute.
2. Add chicken and salt and pepper. Cook for a few minutes to brown all sides.
3. Add red pepper, coconut milk, chicken broth, turmeric, chili flakes (if using), tamari, and maple syrup. Stir well. Bring to a boil, then reduce heat to low and simmer for 10 minutes until chicken is cooked through.
4. Meanwhile, cook noodles according to package directions.
5. Before serving, stir in lime juice.
6. Divide noodles into serving bowls. Ladle hot curry over noodles, and garnish with shallots, cilantro, and green onion.

Chickpea Corn Tomato Curry

Yield: 3-4 servings

1 tbsp coconut oil
1/2 onion, chopped
1 cup cherry tomatoes, halved
1 tbsp chili powder
1 tbsp curry powder
1 tbsp ground cumin
1 tsp red chili flakes
3 cloves garlic, minced
1 14-oz can chickpeas, rinsed and drained
3/4 cup corn
1 can coconut milk
salt and pepper
1 1/2 cup spinach
juice of 1/2 lime
cilantro, roughly chopped

1. In a large pot, heat the oil over medium heat.
2. Once hot, add the onions with a pinch of salt. Sauté for 3 to 5 minutes, or until soft.
3. Add the tomatoes and spices, and cook for 3 minutes, stirring.
4. Add garlic, chickpeas, corn, and coconut milk. Stir to combine. Simmer for about 10 minutes, stirring occasionally.
5. Season with salt and pepper.
6. Add spinach and lime juice and stir until spinach wilts.
7. Garnish with cilantro. Serve over rice.

Keema Madras (Lentil and Potato Curry)

Yield: 4 servings

1/3 cup red lentils
3/4 cup potatoes, cubed
salt and pepper
1/2 tsp cinnamon (or 1-inch cinnamon stick)
1 tsp fennel seeds
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp poppy seeds
1 tsp rice flour
1/2 tsp sage
1 tbsp coconut oil
1/2 onion, finely chopped
3 cloves garlic, finely chopped
6 curry leaves
2 medium tomatoes, diced
2 tbsp shredded coconut
1/3 cup walnuts, chopped
1/3 cup shredded carrots
garnish: cilantro, pepper flakes, lime juice

1. In a saucepan, add red lentils, potatoes, 2 cups water, and a good pinch of salt. Cook uncovered over medium heat until potatoes are tender, 12 to 15 minutes. Do not drain.
2. Heat a skillet over medium heat. Toast spices for 2 to 3 minutes.
3. Add onion, garlic, and curry leaves, and cook until translucent, stirring occasionally.
4. Meanwhile, blend the tomatoes with coconut and a few spoonfuls of water until smooth.
5. Add the blended tomato coconut mixture to the skillet and cook over medium until it thickens and oil starts to leave the mixture, 5 to 7 minutes.
6. Add the carrots and walnuts and cook for 2 minutes.
7. Add the cooked lentils and potatoes with the cooking liquid (should be about a half cup or so). Reduce heat to medium-low, cover and cook for 5 to 7 minutes.
8. Garnish with cilantro, pepper flakes, and lime juice. Serve with rice, flatbread or dosas.

Yellow Chickpea Pumpkin Curry

Yield: 4 servings

1/2 tbsp coconut oil
1/2 onion, chopped
1 carrot, chopped or julienned
3 cloves garlic, minced
1 tbsp ginger, grated
2 cups pumpkin or butternut squash, cubed
1 head cauliflower, cut into florets
1 tbsp yellow curry paste
1 tsp ground turmeric
1/4 tsp cayenne pepper, or to taste
1 can coconut milk
1 cup broth or water
2 tbsp creamy peanut butter
1 tbsp tamari or coconut aminos
salt and pepper, to taste
1 red bell pepper, julienned
1 can chickpeas, rinsed and drained
1/2 cup frozen peas
to garnish: cilantro, green onion, and chopped peanuts

1. Place a large pot over medium high heat. Add coconut oil, onion, carrot, garlic, and ginger and cook for 2 to 3 minutes.
2. Add cauliflower florets and cubed pumpkin. Saute for about 5 minutes until vegetables begin to soften a bit.
3. Add curry paste, turmeric, and cayenne, and cook for 30 seconds.
4. Add coconut milk, broth, peanut butter, tamari, and salt and pepper. Stir well to combine and cook for 5 minutes.
5. Add bell pepper and chickpeas. Simmer over medium-low heat for 10 minutes.
6. Just before serving, stir in frozen peas and simmer an additional minute.
7. Garnish with cilantro, green onion, and chopped peanuts.

Lamb Rogan Josh

Yield: 6 servings

Curry Paste:
1 red bell pepper
2 cloves garlic, peeled and roughly chopped
1-inch piece of ginger, peeled and roughly chopped
1/2 bunch cilantro
1 red chile
2 tbsp tomato paste
3 tbsp olive oil
1 tbsp paprika
2 tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1 tsp ground turmeric
salt and pepper, to taste

Curry:
1 tbsp olive oil
1 onion, thinly sliced
1-inch piece of ginger, peeled and finely chopped
1 red chile, thinly sliced (seeded if you prefer less heat)
2 bay leaves
2 lbs lamb stewing meat, cut into 1-inch cubes
salt and pepper
1/2 batch of curry paste
1 tbsp balsamic vinegar
1 can diced tomatoes
3 cups stock or water
juice of 1/2 lemon
1/2 bunch cilantro leaves, roughly chopped
plain yogurt, for serving

1. Make the curry paste first. Preheat the broiler or grill to high. Broil or grill the red bell pepper until charred on all sides.
2. Place the blackened pepper into a small bowl, and cover with plastic wrap. Set aside for 15 minutes.
3. Rub off the charred skin. Pry open the pepper and pull out the seeds. Slice into thick strips.
4. Place the peppers and remaining curry paste ingredients into a food processor. Blitz to a smooth paste.
5. Set aside half of the curry paste to use now and save the other half for another use.
6. To make the curry, place a large Dutch oven or heavy pot on medium-high heat. Add olive oil. When hot, add onion, ginger, chile, and bay leaves, and cook until softened, about 10 minutes.
7. Add the lamb, and season with salt and pepper to taste.
8. Add the curry paste and balsamic vinegar. Cook, stirring frequently, for a couple of minutes.
9. Add the tomatoes and stock. Bring to a boil, cover, and reduce heat to medium-low. Simmer for 1 hour, stirring occasionally.
10. Stir in the lemon juice and cilantro and season with salt and pepper to taste.
11. Serve with a spoonful of yogurt.

Tofu Cashew Coconut Curry

Yield: 4 servings

1 tbsp coconut oil
3 cloves garlic, minced
1 tbsp ginger, grated
1 jalapeño, diced
1 medium sweet potato, diced into 1-inch cubes
1/2 head of cauliflower, cut into small florets (about 2-3 cups)
1 yellow or orange bell pepper, diced
2 carrots, thinly diced or chopped
2 tbsp curry powder
1/2 tsp turmeric
1/2 tsp cumin
1/8 tsp cinnamon
1/2 tsp salt
1 can coconut milk
1/2 cup tomato sauce
1/2 cup vegetable broth
1/4 cup roasted cashews, ground
1 package firm or extra firm tofu, cubed
to garnish: cilantro and extra cashews

1. In a large pot, heat coconut oil over medium-high heat. Add in garlic, ginger, jalapeno, sweet potato, cauliflower, bell pepper, and carrots. Saute for 10 minutes, stirring frequently, until carrots start to soften.
2. Stir in curry powder, turmeric, cumin, cinnamon and salt.
3. Add coconut milk, tomato sauce, broth, and ground cashews. Stir until smooth.
4. Gently add in tofu and stir. Simmer on low heat for 20 minutes or until sweet potatoes and carrots are fork tender.
5. Serve immediately with cilantro and extra cashews.

Green Lentil Soup

Yield: 4 servings

1/4 cup olive oil
1 medium onion, chopped
2 carrots, chopped
4 cloves garlic, minced
2 tsp cumin
1 tsp curry powder
1/2 tsp thyme
1 large can diced tomatoes
1 cup brown or green lentils
4 cups vegetable broth
2 cups water
1 tsp salt
pinch red pepper flakes
ground black pepper, to taste
1 cup collard greens or kale, tough ribs removed and chopped
2 tbsp lemon juice, or to taste

1. In a large pot, heat the olive oil over medium heat. Add the onion and carrot, and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
2. Add the garlic, cumin, curry powder and thyme. Cook until fragrant while stirring constantly, about 30 seconds.
3. Pour in the diced tomatoes and cook for a few more minutes.
4. Add in the lentils, broth, water, salt, red pepper flakes, and pepper. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender but still hold their shape.
5. Transfer 2 cups of the soup to a blender and purée the soup until smooth. Pour the puréed soup back into the pot.
6. Add the chopped greens and cook for 2 more minutes, or until the greens have softened to your liking.
7. Remove pot from the heat and stir in lemon juice. .
8. Serve while hot. Leftovers will keep well for about 4 days in the refrigerator, or can be frozen for several months.

Tempeh and Potato Curry

Yield: 4 servings

8 oz tempeh
1 cup diced tomatoes
2 tbsp tomato paste
1 tbsp lime juice
1 tbsp coriander
1 tbsp sesame seeds
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp paprika
1/2 tsp red pepper flakes
1/4 tsp fenugreek
1/4 tsp garam masala
salt and pepper
1 tbsp coconut oil
1/2 medium onion, chopped
4 cloves garlic, minced
1/2-inch ginger, grated
1 potato, cubed
1 can coconut milk
cilantro and lemon for garnish

1. Steam the tempeh for 12 minutes. Set aside.
2. In a blender, combine tomato, tomato paste, lime juice, and all spices and seeds. Blend until smooth.
3. In a large pot, heat the oil over medium heat. Add onion, garlic, ginger, and a good pinch of salt, and cook until translucent.
4. Crumble the steamed tempeh and add to the pot. Cook for a minute to brown some edges.
5. Add the blended tomato and spice mixture. Mix well and cook over medium heat until the sauce is drying out and sticking to the tempeh (around 7 to 10 mins).
6. Add the potato and coconut milk. Mix well to incorporate, cover and cook for 15 minutes or until the potatoes are cooked through and the sauce has thickened a bit.
7. Garnish with cilantro and a dash of lemon. Serve with flatbread, naan, or rice.
8. The dish will keep in the refrigerator for up to 3 days.

Red Lentil Dahl

Yield: 4 servings

1 tbsp olive oil
1 cup onion, diced
1 1/4 cups celery, chopped
1/2 tbsp garlic, finely minced
1 tbsp ginger, grated
1/4 tsp mustard seeds`
1 tsp coriander
2 tsp curry powder
1/2 tsp onion powder
2 cups yam, peeled, chopped
3 1/2 cups water
1 cup red lentils
1 tsp salt
4 cups chopped baby spinach
2 tbsp lemon juice

1. In a pot, heat olive oil over medium heat. Add onion, celery, garlic, ginger, mustard seeds, coriander, curry powder, and onion powder. Saute for 5 to 8 minutes, or until onions are soft.
2. Add water and lentils. Bring mixture to a boil, then cover and simmer on low for 30 minutes.
3. Add chopped spinach, salt, and lemon. Serve warm.

Chicken Biryani

Yield: 4 servings

Rice:
300g basmati rice, cooked and cooled

Marinade:
600g chicken thighs, cut into bite-size pieces
3 tbsp greek yogurt
4 cloves garlic, finely minced
1-inch ginger, finely minced
1 tsp ground coriander
1/2 tsp turmeric
1/4 tsp chilli powder
1/4 tsp garam masala
salt and pepper

Sauce:
3 tbsp coconut oil (or ghee)
4 green cardamom pods
1 tsp cumin seeds
200g onion, thinly sliced
160g tomatoes, roughly chopped
1 tbsp tomato paste
2 bird eye green chillies, slit lengthwise

Garnish:
pinch of saffron
1/4 cup raisins
2 tbsp mint, roughly chopped
2 tbsp cilantro, roughly chopped

1. In a large bowl, combine all the marinade ingredients. Let sit for 20 minutes or overnight.
2. In a large pot, heat the oil over medium heat. Add the cardamom and cumin and fry for a few seconds.
3. Add the sliced onion and cook for 5 to 6 minutes.
4. Add the chopped tomatoes. Cook, stirring well, for 3 minutes. Mash with the back of the spoon as they soften.
5. Add the tomato paste and continue to cook for another minute.
6. Add the slit chillies and cook for one minute.
7. Add the marinated chicken and cook for 3 to 4 minutes to seal the chicken pieces. Season to taste. Lower the heat and simmer with the lid on for 5 minutes. Stir the chicken half way through cooking. Add 2 to 3 tbsp water if chicken starts sticking.
8. Remove from heat. Place half the rice over the chicken, followed by half the garnish ingredients. Layer the remaining rice, followed by the rest of the garnish ingredients.
9. Cover and return to stove over low heat. Cook for 5 minutes. Turn the heat off and let rest for 10 minutes.
10. Serve warm with cucumber raita.

Chicken Tikka Masala

Yield: 2-3 servings

1 clove garlic, minced
thumb-sized piece ginger, finely grated
1 tbsp coriander
2 tsp ground turmeric
pinch cloves
1 cup coconut yoghurt
juice of 1 lemon
1/4 tsp salt
1/4 tsp black pepper
2-3 chicken legs
1/4 cup chicken broth

1. Preheat oven to 375F. Line a shallow roasting tray with parchment paper.
2. In a small bowl, combine garlic, ginger, coriander, turmeric, cloves, coconut yoghurt, lemon juice, salt, and pepper. Stir well.
3. Arrange chicken legs in prepared roasting tray. Take half the marinade and slather it over the chicken legs. Bake for 30 to 40 minutes, or until the chicken is completely cooked through.
4. In a small saucepan, warm the remaining half of the marinade, stirring gently. Add the chicken stock and heat fully. Serve over roasted chicken legs.

Chicken Korma

Yield: 4 servings

4 large chicken breasts, sliced thin
2 tsp salt, to rub on chicken
1/4 cup coconut oil
1 onion, peeled and sliced
4 cloves garlic, peeled and diced
4 tsp ground turmeric
1 tsp ground cinnamon
2 tsp ground ginger
1/2 cup water
1 cup coconut cream
2 tsp maple syrup (or honey)
cilantro leaves, to garnish

1. Slice the chicken breasts very thin and season with salt.
2. In a large pan, heat the olive oil over medium-high heat. Brown the chicken pieces on both sides. Remove and set aside.
3. In the same pan, cook the onions and garlic over low heat until they have softened.
4. Add the turmeric, cinnamon, ginger, and water. Cook until the mixture has reduced completely.
5. Return chicken pieces to the pan and cook with the lid on for 30 minutes.
6. Stir in the coconut cream and maple syrup. Simmer until the sauce thickens.
7. Serve chicken korma over cauliflower-cilantro rice.
8. Garnish with cilantro leaves.

Sunflower and Hempseed Pate

Yield: 4 cups

1 1/2 cups sunflower seeds, soaked at least 6 hours
2 tbsp lemon juice
1 tbsp miso
2 tbsp tamari
1 tbsp grated ginger
5 dates, soaked, soaking liquid reserved
3/4 tbsp dill
1/2 tsp cumin
1/2 tsp curry powder
1 stalk celery, chopped
1 cup grated carrot or sweet potato
1 tsp turmeric
1/4 cup parsley
2 cups hemp seeds

1. Combine all ingredients in food processor and pulse to combine.
2. Can be used as a stuffing for raw mini peppers or tomatoes, as a dip for vegetables, a spread for pita or sandwiches, or a filling for nori rolls.

Curried Chicken Breast

Yield: 4 servings

4 chicken breasts
1 tbsp olive oil
2 tbsp coconut milk (or almond milk)
1 clove garlic, finely minced
1 tsp ginger, finely minced
1 stalk green onion, chopped
2 tbsp parsley, chopped
2 tsp curry powder
½ tsp cayenne pepper
salt and pepper

1. Preheat oven to 350F. Line a baking dish with parchment paper.
2. In a small or medium bowl, add olive oil, coconut milk, garlic, ginger, green onion, parsley, curry powder, cayenne pepper, and salt and pepper. Stir to combine.
3. Add chicken breasts to prepared baking dish. Pour marinade over chicken and toss to coat. Let marinate for 15 minutes (or up to 2 hours).
4. Bake for 30 minutes, or until chicken is cooked through.

Green Curry Sauce

Yield: 2 1/2 cups

2 tbsp coconut oil
1/2 yellow onion, chopped
2 stalks lemongrass, exterior removed and chopped (about ¼ cup)
3 cloves garlic, minced
1 tbsp ginger, minced
1 tbsp fresh turmeric, minced (or 2 tsp ground)
1 bunch cilantro, roughly chopped
1 can coconut milk
salt and pepper, to taste
2 limes, juiced

1. In a heavy-bottomed pot, heat the coconut oil over medium-high heat. When hot, add the onions and sauté for 5 minutes, or until translucent, stirring occasionally.
2. Add the lemongrass, garlic, ginger, turmeric, and cilantro to the pan and cook for 3 minutes, stirring.
3. Add the coconut milk and salt and pepper, turn down to a simmer, and cook for 5 minutes. Remove from heat and let cool for a few minutes.
4. Add the lime juice.
5. Transfer to a blender and blend on high until well incorporated.

Tom Kha Gai

Yield: 4 servings

2 cans coconut milk
1 thumb-sized chunk galangal, peeled, cut into thin slices
1 stalk lemongrass, sliced into 1-inch strips
2-3 chicken breasts, cut into pieces
1 Thai chili, thinly sliced
8 oyster mushrooms, torn
1 onion, sliced
2 tomatoes, quartered
6 kaffir lime leaves, torn
salt and pepper
1/4 cup lime juice
1/4 cup cilantro, chopped

1. In a large pot over medium heat, add one can of coconut milk, galangal, and lemongrass. 
2. Just before the coconut milk comes to a boil, add the chicken and the second can of coconut milk. Reduce heat to medium-low, as you don’t want the coconut milk to heat too fast or burn.
3. Add chili and oyster mushrooms and stir. As the coconut milk is so delicate, be sure to stir your spoon in one direction only, otherwise it may start to curdle. 
4. Add the onions.
5. As the soup is just about to boil, add the tomatoes and kaffir lime leaves.
6. Season with salt and pepper.
7. Cook the soup slowly and gently over low heat for about 5 to 10 minutes, making sure it does not come to a full boil, but long enough that the chicken and onions are fully cooked.
8. Remove from heat and finish with lime juice and cilantro before serving. Serve on top of rice.

Thai Yellow Coconut Chicken Curry

Yield: 4 servings

1 tbsp coconut oil
1 onion, diced
3 cloves garlic, minced
1 tbsp ginger, minced
1 Thai red chili (or serrano pepper), thinly sliced (optional: with seeds)
salt and pepper
1 lb chicken thighs, cut into pieces
3 tbsp red curry paste
1 can coconut milk
2 tbsp coconut sugar
1 tbsp tamari
2 tsp ground turmeric
1 red bell pepper, diced
1 green bell pepper, diced
1 ripe mango, cubed
1/4 cup peas
juice of 1 lemon
1/4 cup cashews
fresh cilantro, for serving

1. In a large pot, heat coconut oil over medium heat. Once hot, add onion, garlic, ginger, and chili. Add a pinch of salt and pepper, and sauté for 2 to 3 minutes, stirring frequently.
2. Add chicken and stir.
3. Add red curry paste and stir, and cook for 2 minutes more.
4. Add coconut milk, coconut sugar, tamari, and turmeric. Bring to a simmer.
5. Once simmering, add red pepper and green pepper. Reduce heat slightly to medium-low and cook for 5 to 10 minutes, stirring occasionally.
6. Once the peppers are softened, add mango, peas, and lemon juice, and simmer for 2 to 3 minutes more over low heat.
7. Garnish with cashews and cilantro and serve over rice.

Butter Chickpea Curry (Vegan)

Yield: 4-6 servings

1 tbsp coconut oil
1 onion, chopped
3 cloves garlic, finely minced
2 tsp ground cumin
2 tsp paprika
1 tsp turmeric
1 tsp coriander
1 tsp garam masala
1/2 tsp cayenne
salt and pepper
1 can coconut milk
1/4 cup tomato paste
2 cans chickpeas, drained and rinsed
1 cup peas
1/4 cup cilantro, chopped

1. In a large pot, heat coconut oil over medium heat. Add onion and saute for 5 to 8 minutes, until softened.
2. Add garlic and continue to cook for 1 minute.
3. Add spices and stir to coat.
4. Add coconut milk, tomato paste, and chickpeas. Bring to a boil, then reduce heat and simmer for 10 minutes.
5. Add peas and continue to cook for 2 minutes.
6. Garnish with cilantro before serving.

Green Lentil, Yam, Mushroom, and Green Bean Curry

Yield: 4-6 servings

1 cup green lentils
1 tbsp coconut oil
1 tbsp cumin seeds
1 onion, finely chopped
3 cloves garlic, minced
1 knob ginger, grated
1 tsp garam masala
1 tsp turmeric
1/2 tsp ground fenugreek
1/2 tsp cayenne
salt and pepper
2 yams, peeled, cut into 1-inch pieces
2 tbsp chickpea flour
2 cups water
2 cups mushroom broth
1 cup whipping cream
8 crimini mushrooms, quartered
1 cup green beans, cut into 1-inch pieces
1/2 cup asparagus, cut into 1-inch pieces

1. In a medium pot, bring lentils to a boil in 4 cups of water. Reduce heat and simmer for 15 to 20 minutes, or until lentils are just tender. Drain, rinse in cold water to stop cooking process, and set aside.
2. Meanwhile, in a large pot, heat coconut oil over medium heat. Add cumin seeds and allow to sizzle for 10 to 15 seconds.
3. Add onions and saute until translucent, about 5 minutes.
4. Add the garlic, ginger, and spices. Saute for 1 minute.
5. Add the yams and cook, stirring, for 3 minutes. This is to coat the yams in oil and prevent them from becoming too mushy in the curry.
6. In a medium bowl, combine the chickpea flour and water. Whisk well. Add this mixture to the pot along with the mushroom broth and bring to a boil. Reduce heat to medium and simmer for 10 to 15 minutes. Yams should be nearly soft but still slightly undercooked.
7. Add cream, mushrooms, green beans, and asparagus. Continue to cook for 5 to 10 minutes until all vegetables are just cooked.
8. Add cooked lentils to the pot and stir to combine.

Tomato Coconut Curry Sauce

Yield: 2 cups

1 tbsp coconut oil
1 onion, diced
1 jalapeno pepper, finely minced
4 cloves garlic, finely minced
1 can whole tomatoes
1 can coconut milk
1 tsp ground cumin
1/2 tsp cayenne pepper
salt and pepper
1/4 cup cilantro, chopped

1. In a medium pot, heat coconut oil over medium heat. Add onions and saute for 5 minutes, or until softened.
2. Add jalapeno and garlic and cook for one minute.
3. Add canned tomatoes, coconut milk, and spices. Simmer for 10 minutes.
4. Garnish with chopped cilantro before serving.
