Dan Dan Noodles

Servings: 6

1/3 cup sesame oil
6 cloves garlic, minced
1 tbsp chili flakes
1/2 cup tamari (or soy sauce)
1/4 cup hoisin
1 tbsp honey
2 tbsp rice vinegar
3 tbsp peanut butter or tahini
8 oz Chinese egg noodles or rice noodles
2 1/2 cups chicken broth
2 cups spinach, roughly chopped
1/2 lb ground pork or chicken
2 cups mixed mushrooms, chopped
1 shallot, coarsely chopped
4 stalks green onion, thinly sliced

1. Make chili oil: Heat a large skillet over medium heat. Add sesame oil, garlic, and chili flakes. Cook, stirring occasionally, until garlic is fragrant, about 5 minutes. Remove from heat and transfer oil to glass jar.
2. Combine tamari, hoisin, honey, vinegar, peanut butter/tahini, and 1/3 cup water in a bowl.
3. Cook noodles according to package directions. Drain and set aside.
4. In a large pot, add broth and 1/2 the tamari mixture. Bring to a simmer over medium heat. Stir in spinach and keep warm.
5. In a large skillet, heat sesame oil over medium-high heat. Add ground pork. Season with pepper and cook through, about 5 minutes.
6. Add mushrooms and shallot and cook for 2-3 minutes.
7. Slowly pour in 1/2 the tamari mixture. Bring to a simmer and cook until the sauce coats the meat and it begins to caramelize and get crispy, about 5 minutes.
8. Add 2-4 tbsp of chili oil and remove from heat.
9. Ladle broth into bowls. Add noodles and toss to combine. Spoon meat over noodles. Top with green onion and additional chili oil.

Rice Paper Dumplings

Yield: 8-10 dumplings

ground pork
3 oz shiitake mushrooms, diced
ginger, grated
garlic, grated
green onion, thinly sliced
8 oz coleslaw mix
1 tbsp tamarai
2 tsp sesame oil
rice paper rounds

1. Preheat a large pan over medium heat.
2. Add one tablespoon of oil.
3. Add pork and saute until cooked through. Remove from heat.
4. Add shiitake mushrooms and saute until they release some moisutre.
5. Add ginger, garlic, green onion, coleslaw mix, tamari, and sesame oil. Saute for a few more minutes, and add pork back to the pan.
6. Set aside to cool to room temperature before wrapping.
7. Dip each rice paper sheet in water for 5-10 seconds. Place on a lightly moistened towel.
8. Place 1 tablespoon of filling in the center of the wrapper. Fold the bottom half up over the filling, then fold in the left and right sides. Roll it up from the bottom to form an envelope shape.
9. Store under a damp cloth or paper towel until ready to cook.
10. Heat a skillet over medium heat. Add oil. Pan-fry the dumplings for 3 minutes per side, until golden brown and crispy.
11. Serve with dumpling dipping sauce.

Dumpling Dipping Sauce

Yield: 1/4 cup

2 tbsp tamari
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp sambal oelek or sriracha
sesame seeds

1. Combine all ingredients in a bowl and whisk to combine.

Thai Peanut Chicken

Yield: 4 servings

1 tbsp olive oil
1 lb boneless, skinless chicken, cubed
salt and pepper
1 onion, chopped
2 carrots, thinly sliced
3 cloves garlic, minced
1 can coconut milk
1/2 cup chicken broth (or vegetable broth)
1/2 cup creamy peanut butter
3 tbsp tamari
1 tbsp ginger, grated
1 tbsp sriracha
3 cups broccoli florets
1 red bell pepper, thinly sliced
juice of 1 lime
1/4 cup cilantro, chopped
optional garnishes: chopped peanuts, green onion

1. In a large pot, heat olive oil over medium high heat. Once hot, add chicken, season with salt and pepper, and sear each side, about 5 to 7 minutes total. Chicken does not need to be fully cooked. Remove from pot and set aside.
2. Reduce heat to medium and add in onion, carrots, and garlic, cooking for 5 minutes.
3. Add in the coconut milk, chicken broth, peanut butter, tamari, ginger, and sriracha. Whisk together until well combined and smooth.
4. Stir in broccoli and bell pepper and return chicken back into the pan. Bring to a boil, reduce heat to low, and simmer for 15 minutes.
5. Stir in lime and cilantro.
6. Garnish with chopped peanuts and green onion.

Sesame Baked Tofu

Yield: 2-3 servings

1 lb extra firm tofu
2 tbsp avocado oil
2 tsp sesame oil
2 tsp tamari
salt and pepper
1 tbsp cornstarch
1 tbsp panko
1 tbsp sesame seeds

1. Preheat oven to 400F. Line a baking sheet with parchment paper.
2. Wrap the tofu in an absorbent towel and set something heavy on top to press out extra moisture. Let press for at least 30 minutes.
3. Unwrap tofu and cut into 1/2-inch cubes and place in a medium mixing bowl.
4. Toss tofu with avocado oil, sesame oil, tamari, salt, and pepper.
5. Add cornstarch, panko, and sesame seeds. Stir to coat.
6. Spread tofu onto prepared baking sheet. Bake for 30 to 40 minutes, stirring halfway through.
7. Garnish with additional sesame seeds, if desired.

Red Curry Noodles with Chicken

Servings: 2-3

1 tbsp olive oil
1-2 cloves garlic, minced
2 tbsp red curry paste
3/4 lb boneless chicken, cut into pieces
salt and pepper
1 red bell pepper, sliced
1 can coconut milk
2 cups chicken broth
2 tsp turmeric (or curry powder)
optional: 1 tsp chili flakes
2 tbsp tamari (or soy sauce)
1 tsp maple syrup (or honey)
2 cups egg noodles
juice of 1 lime
1 shallot, coarsely chopped
1/4 cup cilantro, chopped
2-3 stalks green onion, thinly sliced

1. In a large skillet, heat olive oil over medium-high heat. Add garlic. Stir in red curry paste. Cook for 1 minute.
2. Add chicken and salt and pepper. Cook for a few minutes to brown all sides.
3. Add red pepper, coconut milk, chicken broth, turmeric, chili flakes (if using), tamari, and maple syrup. Stir well. Bring to a boil, then reduce heat to low and simmer for 10 minutes until chicken is cooked through.
4. Meanwhile, cook noodles according to package directions.
5. Before serving, stir in lime juice.
6. Divide noodles into serving bowls. Ladle hot curry over noodles, and garnish with shallots, cilantro, and green onion.

Hot and Sour Soup (authentic)

Servings: 2-3

2 dried shiitake mushrooms
2-3 pieces dried black fungus
3.5 oz pork, thinly sliced
2 tsp tamari
2 tsp cornstarch
5 oz silken tofu, thinly sliced
2 eggs, beaten
1/3 cup shredded carrot
1/2 tbsp minced ginger
4 cups chicken stock
2 tbsp cornstarch
2 tbsp water
2 tbsp tamari
1 tsp sugar
1 tsp salt, or to taste
1 tsp white peppercorn
3 tbsp Chinese black vinegar (or rice vinegar)
1 tsp sesame oil
garnish: cilantro and green onion

1. Soak the dried shitake mushrooms and black fungus for 4 hours until they are completely rehydrated. Slice them thinly.
2. Marinate pork with tamari and cornstarch. Let sit about 15 minutes.
3. In a small sauce bowl, combine 2 tbsp cornstarch and 2 tbsp water together. Mix it until no lumps remain, then add tamari, sugar, and salt. Stir until everything is well combined.
4. In another sauce bowl, combine ground white pepper and Chinese black vinegar. Mix it until the pepper is fully distributed.
5. In a wok, add ginger, sliced mushroom and black fungus, shredded carrot, and chicken stock. Stir to combine. Cover and bring to a boil.
6. Add the pork and stir for 10 seconds to keep meat from sticking together.
7. Add the tofu. Using a wooden spoon, gently stir to not break the tofu.
8. Cover and bring back to a boil then add in the sauce while whisking.
9. Then add the beaten egg while whisking. Cook for another 30 seconds so all the ingredients can come together.
10. Add the white pepper and vinegar. The flavor will fade if cooked too long so add it 10 seconds before turning off the heat.
11. Just before serving, top with sesame oil and cilantro and green onion for garnish.

Teriyaki Salmon Bowl

Yield: 2 servings

1/3 cup teriyaki sauce (recipe below)*
2 salmon fillets (115-170g)
4-8 stalks bok choy
1 cup cooked rice (or noodles)
1 avocado, sliced
2 stalks green onion, thinly sliced
1 tbsp sesame seeds
lime, quartered

Teriyaki sauce:
1/4 cup tamari (or soy sauce or coconut aminos)
1 tbsp maple syrup
2 cloves garlic, minced
1-inch knob of ginger, minced
juice of 1/2 lemon
1 tsp sesame oil

1. If making teriyaki sauce, combine all ingredients in a small bowl and stir together.
2. Place the salmon in a shallow bowl or baking sheet. Pour half the teriyaki sauce over the fillets ensuring each piece is well coated. Let marinate for 15 minutes or up to 2 hours in the refrigerator.
3. Prepare your rice (or noodles).
4. Prepare the bok choy. If they are small, they can be left whole. Otherwise, cut into half (or quarters if very large). Wash thoroughly.
5. Preheat the oven to 400F. Line a baking sheet with parchment paper.
6. Place marinated salmon (skin-side down) onto prepared baking sheet. Add bok choy around salmon.
7. Bake until salmon is cooked through, about 10 minutes (can vary based on thickness of the salmon pieces). The salmon should flake easily.
8. To serve, place cooked salmon and bok choy over rice. Drizzle with remaining teriyaki sauce. Add avocado and garnish with green onion, sesame seeds, and lime.

Cauliflower Fried Rice

Yield: 4 servings

2 tbsp olive oil, divided
2 eggs, beaten
salt and pepper
1/2 onion, sliced
3 cloves garlic, minced
1-inch knob ginger, minced
1 head cauliflower, grated into rice
1/4 cup tamari
1/4 tsp red pepper flakes
1 tsp maple syrup
1 cup frozen peas and carrots
1 tsp rice vinegar
1 tsp sesame oil
3-4 green onions, chopped
1/4 cup cashews or peanuts, chopped

1. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the eggs and salt and pepper. Cook, stirring, until the eggs are cooked. Remove from pan and set aside. Wipe the pan clean.
2. Place the skillet back on medium heat and add another tablespoon of oil to the pan. Add the onion, garlic, and ginger and cook, stirring often, until softened but not browned, 3 to 4 minutes.
3. Add the riced cauliflower, tamari, red pepper flakes, and maple syrup. Cook, stirring often, for about 3 minutes.
4. Add the peas and carrots and continue cooking until the cauliflower is tender-crisp and the vegetables are warmed through.
5. Stir in the rice vinegar, sesame oil, green onion, nuts, and eggs. Serve hot.

Yellow Chickpea Pumpkin Curry

Yield: 4 servings

1/2 tbsp coconut oil
1/2 onion, chopped
1 carrot, chopped or julienned
3 cloves garlic, minced
1 tbsp ginger, grated
2 cups pumpkin or butternut squash, cubed
1 head cauliflower, cut into florets
1 tbsp yellow curry paste
1 tsp ground turmeric
1/4 tsp cayenne pepper, or to taste
1 can coconut milk
1 cup broth or water
2 tbsp creamy peanut butter
1 tbsp tamari or coconut aminos
salt and pepper, to taste
1 red bell pepper, julienned
1 can chickpeas, rinsed and drained
1/2 cup frozen peas
to garnish: cilantro, green onion, and chopped peanuts

1. Place a large pot over medium high heat. Add coconut oil, onion, carrot, garlic, and ginger and cook for 2 to 3 minutes.
2. Add cauliflower florets and cubed pumpkin. Saute for about 5 minutes until vegetables begin to soften a bit.
3. Add curry paste, turmeric, and cayenne, and cook for 30 seconds.
4. Add coconut milk, broth, peanut butter, tamari, and salt and pepper. Stir well to combine and cook for 5 minutes.
5. Add bell pepper and chickpeas. Simmer over medium-low heat for 10 minutes.
6. Just before serving, stir in frozen peas and simmer an additional minute.
7. Garnish with cilantro, green onion, and chopped peanuts.

Halibut with Tamari Ginger Dressing

Yield: 6 servings

1/4 cup tamari
3 tbsp rice vinegar
2 tbsp mirin
2 tbsp olive oil
2 tsp sesame oil
2 scallions, thinly sliced on the diagonal
1/4 cup finely julienned peeled fresh ginger
1 tsp red pepper flakes
6 halibut fillets, skinned
1 tbsp sesame seeds

1. In a small bowl, combine tamari, rice vinegar, mirin, olive oil, sesame oil, scallions, ginger, and red pepper flakes.
2. In a large, shallow dish, brush the halibut fillets with half of the dressing. Cover and refrigerate for 30 minutes.
3. Preheat the oven to 450F. Bake in the upper third of the oven for 10 to 12 minutes, or until glazed and just cooked through.
4. Pour the remaining dressing over the fish, sprinkle with the toasted sesame seeds, and serve.

Kimchi Fried Rice with Tofu and Broccoli

Yield: 2-3 servings

2 tbsp olive oil, divided
1 8-oz block tofu, cut into 1-inch pieces
1 clove garlic, minced
1/2 tsp smoked paprika
1 tsp maple syrup
sea salt, to taste
1/2 cup kimchi, drained (reserve the juice) and chopped
1 1/2 cups cooked brown rice
2 tsp chili paste (or to taste)
1 tsp tamari
1 tsp toasted sesame oil
2 cups steamed broccoli florets
2 green onions, thinly sliced

1. Heat a large skillet over medium-high heat. Add half the olive oil to the skillet. Add the tofu pieces to the skillet and stir with a spatula. Keep sauteing until golden brown edges start to appear, about 5 minutes. Add the garlic, smoked paprika, maple syrup, and a pinch of salt to the skillet and stir until fragrant, about 10-20 seconds. Remove from pan.
2. Wipe out the skillet if necessary and return it to the heat with the remaining olive oil. Add the chopped kimchi to the skillet and saute until slightly browned, dried out, and fragrant, about 1 minute. Add the rice to the skillet and stir.
3. In a small bowl, whisk together one tablespoon of the reserved kimchi juice with the chili paste, tamari, and sesame oil.
4. Add this mixture to the skillet and stir. Raise the heat to high. Keep stirring until the rice stops sticking together and is slightly browned.
5. Add the steamed broccoli and tofu to the skillet and stir. Garnish with green onion before serving.

Sunflower and Hempseed Pate

Yield: 4 cups

1 1/2 cups sunflower seeds, soaked at least 6 hours
2 tbsp lemon juice
1 tbsp miso
2 tbsp tamari
1 tbsp grated ginger
5 dates, soaked, soaking liquid reserved
3/4 tbsp dill
1/2 tsp cumin
1/2 tsp curry powder
1 stalk celery, chopped
1 cup grated carrot or sweet potato
1 tsp turmeric
1/4 cup parsley
2 cups hemp seeds

1. Combine all ingredients in food processor and pulse to combine.
2. Can be used as a stuffing for raw mini peppers or tomatoes, as a dip for vegetables, a spread for pita or sandwiches, or a filling for nori rolls.

Sesame Ginger Chickpea Cakes

Yield: 8 patties

3 tbsp olive oil, divided
1 shallot, chopped
1 tbsp tamari
1 clove garlic, minced
1 can chickpeas, mashed with a fork
2 scallions, chopped
1/2 tbsp grated fresh ginger
1 tsp sesame oil
2 eggs, gently whisked
1/2 tsp coriander
1/4 cup cilantro, chopped
1/2 cup gluten-free flour
1 cup gluten-free breadcrumbs
2 tbsp sesame seeds
salt and pepper

1. In a small pan, heat 1 tablespoon of the olive oil. Add the shallots and cook for a few minutes on medium heat until translucent. Turn off heat and add tamari and garlic. Stir together in the hot pan for another minute. Set aside.
2. In a medium bowl, combine the chickpeas, scallions, ginger, sesame oil, eggs, coriander, cilantro, flour, and cooked shallots.
3. Form into patties. Try to pack into a ball and then gently press down to flatten. They will fall apart easily, so just try to pat them together as best as you can.
4. Spread the breadcrumbs on a plate. Mix in sesame seeds, and a few pinches of salt and pepper. Roll each patty in the breadcrumb mixture, covering liberally, and set aside.
5. Heat the remaining 2 tablespoons of olive oil in a large skillet (be sure the bottom of your skillet is completely coated with the oil). When the oil is hot, add the patties. Cook for 1 to 2 minutes on each side, or until golden brown. Serve with yogurt sauce.

Tomato and Thyme Cod

Yield: 4 servings

1 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
400g can chopped tomatoes
1 tsp maple syrup
few sprigs thyme
1 tbsp tamari
4 cod fillets (or another white flaky fish)

1. In a medium pot, heat oil over medium heat. Add onion, and cook for 5 to 8 mins, until lightly browned.
2. Add garlic and cook for 1 minute.
3. Stir in chopped tomatoes, maple syrup, thyme, and tamari. Bring to a boil, then reduce heat and simmer for 10 minutes.
4. Gently add cod fillets into the sauce. Cover and gently cook for 8 to 10 mins, until the cod flakes easily.

Sweet and Sour Chicken

Yield: 4 servings

4 chicken breasts, sliced
2 tsp cornstarch
juice of 1 lime
salt and pepper
1 tbsp olive oil
1 small onion, sliced
2 cloves garlic, finely minced
1-inch piece ginger, finely minced
1 red pepper, cut into 1-inch pieces
1 yellow pepper, cut into 1-inch pieces
1 bunch asparagus
1 cup broccoli florets
1 cup pineapple, cut into 1-inch pieces
1 tbsp tamari
1 tbsp fish sauce
1 tsp red pepper flakes
1 tsp honey
1/4 cup cilantro, chopped
lime wedges, to garnish

1. In a medium bowl, combine chicken, cornstarch, juice of half a lime, and salt and pepper. Toss to coat.
2. Heat oil in a large pan over a high heat. Add chicken and cook for 5 to 6 minutes, or until the chicken is golden and cooked through. Remove from pan.
3. Add onion to the pan, and saute for 5 minutes.
4. Add garlic, ginger, red pepper, yellow pepper, asparagus, broccoli, add stir-fry for 3 minutes.
5. Add pineapple, tamari, fish sauce, red pepper flakes, and honey. Let cook for a couple more minutes. Vegetables should be just cooked (still with a touch of crunch). Add a splash of water to loosen the sauce, if needed.
6. Serve immediately over rice, with chopped cilantro and lime wedges to garnish.

Thai Basil Chicken

Yield: 3-4 servings

2 tbsp coconut oil
10 oz ground chicken
2 shallots, finely chopped
3 cloves garlic, finely chopped
1 tbsp fish sauce
1 tsp tamari
1 tsp maple syrup
1/2 tsp chili flakes (or 1 jalapeno cut into slivers)
1 bunch Thai basil leaves, roughly chopped
salt and pepper, to taste

1. In a large pan, heat the oil over medium-high heat. Add the ground chicken and stir fry until chicken is almost cooked through.
2. Add the shallots, garlic, fish sauce, tamari, maple syrup, and chili flakes. Stir to combine well. 
3. When chicken is fully cooked, add basil leaves and stir until the basil leaves wilt and becomes fragrant.
4. Season with salt and pepper and serve immediately.

Hoisin Marinade for Tofu

Yield: 3/4 cup

1/2 cup hoisin sauce
1 tbsp tamari
3 tbsp rice vinegar
1 tbsp lime juice
1 tbsp sriracha
1 clove garlic, finely minced
1 small knob ginger, finely minced

Citrus Miso Dressing

Yield: 1/2 cup

1/4 cup orange juice
1 tbsp lime juice
1 clove garlic, finely minced
2 tsp light miso
1/4 tsp tamari
1/4 tsp dijon mustard
1/4 cup olive oil
salt and pepper

1. Combine all ingredients in a jar. Twist the lid on tight and shake vigorously until creamy and fully incorporated.
