Mexican Lentil and Bean Stew

Servings: 4

1 tbsp olive oil
1/2 onion, chopped
salt and pepper
3 cloves garlic, minced
1/2 cup long grain brown rice
1/2 cup green lentils
2 cups water (or chicken or vegetable stock)
1 tsp chili powder
1/2 tsp ground cumin
1 tsp red pepper flakes
1 can black beans, rinsed and drained
3/4 cup diced tomatoes (canned or fresh)
1/2 zucchini, small dice
1/2 cup frozen corn, defrosted
1/2 cup salsa
juice of 1 lime
optional garnishes: shredded cheese, chopped cilantro, avocado, sour cream

1. In a large pot, heat the oil over medium heat. Add onion and season with salt and pepper. Cook for 5 minutes until beginning to soften.
2. Add garlic and cook for 1 more minute.
3. Add in the brown rice, lentils, and water (or stock). Bring to a boil, then reduce heat to simmer. Cook for about 35 minutes, or until the lentils and rice are tender. If there's any excess liquid drain it.
4. Add the spices and the remaining ingredients. Increase heat to medium-high and cook for 5 to 10 more minutes until vegetables are tender and everything is heated though.
5. Add lime juice, and garnish with any of the optional garnishes.

Keema Madras (Lentil and Potato Curry)

Yield: 4 servings

1/3 cup red lentils
3/4 cup potatoes, cubed
salt and pepper
1/2 tsp cinnamon (or 1-inch cinnamon stick)
1 tsp fennel seeds
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp poppy seeds
1 tsp rice flour
1/2 tsp sage
1 tbsp coconut oil
1/2 onion, finely chopped
3 cloves garlic, finely chopped
6 curry leaves
2 medium tomatoes, diced
2 tbsp shredded coconut
1/3 cup walnuts, chopped
1/3 cup shredded carrots
garnish: cilantro, pepper flakes, lime juice

1. In a saucepan, add red lentils, potatoes, 2 cups water, and a good pinch of salt. Cook uncovered over medium heat until potatoes are tender, 12 to 15 minutes. Do not drain.
2. Heat a skillet over medium heat. Toast spices for 2 to 3 minutes.
3. Add onion, garlic, and curry leaves, and cook until translucent, stirring occasionally.
4. Meanwhile, blend the tomatoes with coconut and a few spoonfuls of water until smooth.
5. Add the blended tomato coconut mixture to the skillet and cook over medium until it thickens and oil starts to leave the mixture, 5 to 7 minutes.
6. Add the carrots and walnuts and cook for 2 minutes.
7. Add the cooked lentils and potatoes with the cooking liquid (should be about a half cup or so). Reduce heat to medium-low, cover and cook for 5 to 7 minutes.
8. Garnish with cilantro, pepper flakes, and lime juice. Serve with rice, flatbread or dosas.

Dahl Soup with Greens

Yield: 4 servings

1 tbsp olive oil
1 small onion, diced
1 tbsp black mustard seeds
2 tsp cumin
2 tsp turmeric
4 cloves garlic, sliced thin
1 small red chile, minced (optional)
2 cups red lentils or yellow mung dhal
8 cups vegetable stock
1 cup coconut milk
2 tsp salt
3 cups baby spinach (or kale), chopped
handful fresh cilantro, chopped
1 avocado, cubed

1. In a large soup pot, heat the oil over medium heat. Add the onions and sauté for a few minutes until aromatic and translucent.
2. Add mustard, cumin, turmeric, garlic, and chile. Allow to cook, stirring constantly to avoid burning, for about 1 minute.
3. Add the lentils, stock, coconut milk, and salt. Bring to a simmer and reduce heat to low. Cook for about 15 to 20 minutes.
4. Remove from heat. Add the chopped greens and stir.
5. Ladle a generous amount into each bowl. Top with cilantro, avocado, and serve with naan.

Green Lentil Soup

Yield: 4 servings

1/4 cup olive oil
1 medium onion, chopped
2 carrots, chopped
4 cloves garlic, minced
2 tsp cumin
1 tsp curry powder
1/2 tsp thyme
1 large can diced tomatoes
1 cup brown or green lentils
4 cups vegetable broth
2 cups water
1 tsp salt
pinch red pepper flakes
ground black pepper, to taste
1 cup collard greens or kale, tough ribs removed and chopped
2 tbsp lemon juice, or to taste

1. In a large pot, heat the olive oil over medium heat. Add the onion and carrot, and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
2. Add the garlic, cumin, curry powder and thyme. Cook until fragrant while stirring constantly, about 30 seconds.
3. Pour in the diced tomatoes and cook for a few more minutes.
4. Add in the lentils, broth, water, salt, red pepper flakes, and pepper. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender but still hold their shape.
5. Transfer 2 cups of the soup to a blender and purée the soup until smooth. Pour the puréed soup back into the pot.
6. Add the chopped greens and cook for 2 more minutes, or until the greens have softened to your liking.
7. Remove pot from the heat and stir in lemon juice. .
8. Serve while hot. Leftovers will keep well for about 4 days in the refrigerator, or can be frozen for several months.

Red Lentil Dahl

Yield: 4 servings

1 tbsp olive oil
1 cup onion, diced
1 1/4 cups celery, chopped
1/2 tbsp garlic, finely minced
1 tbsp ginger, grated
1/4 tsp mustard seeds`
1 tsp coriander
2 tsp curry powder
1/2 tsp onion powder
2 cups yam, peeled, chopped
3 1/2 cups water
1 cup red lentils
1 tsp salt
4 cups chopped baby spinach
2 tbsp lemon juice

1. In a pot, heat olive oil over medium heat. Add onion, celery, garlic, ginger, mustard seeds, coriander, curry powder, and onion powder. Saute for 5 to 8 minutes, or until onions are soft.
2. Add water and lentils. Bring mixture to a boil, then cover and simmer on low for 30 minutes.
3. Add chopped spinach, salt, and lemon. Serve warm.

French Lentil Soup

Yield: 4-6 servings

4 oz bacon, diced
1 onion, chopped
2 carrots, diced
2 stalks celery, diced
1/2 celeriac, diced
1 leek, chopped
2 cloves garlic, minced
1 cup French lentils, rinsed and drained
6 cups chicken broth
1 tbsp red wine vinegar
2 tsp chopped fresh thyme
2 bay leaves
1 tsp salt
1/4 tsp black pepper
1/4 cup fresh parsley, chopped

1. In a stock pot, cook the bacon over medium-high heat until done.
2. Add the onions and cook until soft and translucent and golden, about 7 to 10 minutes.
3. Add the carrots, celery, celeriac, leek, and garlic, and cook for another 4 to 5 minutes or until beginning to soften.
4. Add the lentils, chicken broth, vinegar, thyme, bay leaves, and salt, and pepper. Bring to a boil, then reduce the heat to medium, cover, and simmer for 30 minutes.
5. Stir in the parsley before serving.

Red Lentil Bolognese Sauce

Yield: 6 cups

1 tbsp olive oil
1 shallot, minced
4 cloves garlic, minced
2-3 medium carrots, finely shredded
salt and pepper
4 cups marinara sauce (or tomato sauce)
1/2 tsp red pepper flake
1 tsp dried basil
1 tsp dried oregano
1 tbsp coconut sugar (or maple syrup)
1/2 cup water
3/4 cup red lentils (rinsed and drained)

1. In a large pot over medium heat, heat olive oil. Add shallot and garlic and sauté for 2 to 3 minutes, stirring frequently, until slightly softened and fragrant. Turn down heat if browning.
2. Add carrots and salt and pepper and stir. Cook for 3 to 4 minutes more.
3. Add marinara sauce, red pepper flake, basil, oregano, coconut sugar, water, and lentils. Increase heat slightly and bring mixture to a simmer, then reduce heat to low and continue cooking until lentils are tender, stirring occasionally, about 20 minutes. Add a bit more water if mixture gets too thick.
4. Serve sauce over noodles of choice. Sauce will keep in the refrigerator up to 3 days or in the freezer 1 month.

Red Lentil Spread

Yield: 2 cups

1 cup red lentils
1/4 cup tahini
1/2 garlic clove, smashed
3 tbsp olive oil
juice of 1/2 lemon
2 tbsp red wine vinegar
1/2 tsp coriander
1/2 tsp cumin
1/4 tsp paprika
salt and pepper, to taste

1. Place lentils in a medium pot with 2 cups water. Bring to a boil, then reduce heat and simmer, stirring regularly, for about 15 minutes, or until lentils are tender and the water has mostly been absorbed.
2. In the bowl of a food processor or blender, combine cooked lentils, tahini, garlic, olive oil, lemon juice, vinegar, and spices. Blend until smooth.
3. (Optional) To serve: Spoon hummus into a shallow bowl. Drizzle with olive oil, and sprinkle with paprika and chopped parsley.

Balsamic Lentil Stew

Yield: 4-6 servings

1 tbsp olive oil
1 medium yellow onion, finely chopped
1 medium carrot, finely chopped
1 stalk celery, finely chopped
1 leek, chopped
4 cloves garlic, minced
1 sprig fresh rosemary, minced
1 cup green or brown lentils, rinsed
2 cups cremini mushrooms, sliced
1 sweet potato, diced
1 tbsp balsamic vinegar
1 tbsp tamari
4 cups vegetable stock, divided
salt and pepper, to taste

1. In a large, heavy soup pot, heat olive oil over medium heat. Add the onions, carrots, celery, and leek to the pot and stir. Cook and stir until the onions are quite soft, about 5 minutes.
2. Add the garlic and rosemary and cook for 30 seconds, or until fragrant.
3. Add the lentils and stir to coat.
4. Add the mushrooms and sweet potato and stir to coat.
5. Add the balsamic vinegar, tamari, and vegetable stock. Scrape up any brown bits that have accumulated.
6. Bring the lentils to a boil, then reduce heat to a simmer. Cover and cook until lentils and sweet potato are just tender and there is just enough liquid to keep the mixture thick and stew-like, about 15 to 20 minutes. Season with salt and pepper.

Creamy French Lentils with Mushrooms and Kale

Yield: 4 servings

1 cup French green lentils, rinsed
1 tbsp olive oil
1 shallot, fine dice
2 cups mixed mushrooms, sliced
salt and pepper, to taste
1-2 cloves garlic, minced
2 tsp fresh thyme leaves, minced
2 tbsp white wine (or white wine vinegar or lemon juice)
1 tbsp tamari
1 cup vegetable stock
1 cup coconut milk
3 kale stalks, stems removed, sliced

1. Bring a medium saucepan of water to a boil. Add the lentils to the water with a generous pinch of salt. Simmer the lentils until just tender, about 15 to 18 minutes. Drain, rinse in cold water, and set aside.
2. In a medium pot, heat the olive oil over medium heat. Add the shallot and cook until slightly softened and translucent, about 4 minutes.
3. Add the mushrooms and let them sit for a full minute. Stir the mushrooms and let sit for another full minute.
4. Stir the mushrooms until they start glistening slightly. Season liberally with salt and pepper. Add garlic and thyme and stir.
5. Once the garlic is fragrant, about 30 seconds, add the white wine, tamari, vegetable stock, and coconut milk. Stir and bring the mixture to a boil.
6. Add the cooked lentils to the pot and stir.
7. Remove about half of the mushroom mixture into the blender, ensuring there is enough of the liquid. Blend on high until completely smooth. Scrape the blended mushroom mixture back into the pot.
8. Add the sliced kale and stir. Bring the mixture to a boil and check it for seasoning. The texture should be like a thick and creamy stew.
9. Serve hot with toasts or other accompaniments of your choosing.

Golden Lentil Lemon Soup

Yield: 4 servings

2 tbsp coconut oil
1 onion, finely chopped
2 stalks celery, diced
1 carrot, diced
1 sweet potato, chopped
2 cloves garlic, minced
1-inch ginger, minced
1 tsp cumin
1 tsp turmeric
1/2 tsp red chilli flakes
salt and pepper
1 cup red lentils
2 tomatoes, chopped
4 cups water
1 can coconut milk
juice of 1 lemon
1/2 bunch cilantro, chopped

1. In a large pot, heat the oil over medium-low. Add onion and saute for a couple of minutes.
2. Add celery, carrot, and sweet potato and continue to saute for 5 more minutes.
3. Add garlic, ginger, and spices. Stir and saute for 1 minute.
4. Add the lentils, tomatoes, water, and coconut milk,,  and bring the soup to a boil. Reduce to a simmer and let cook for about 15 minutes or until the lentils are soft and the veggies are cooked through.
5. Add the lemon juice.
6. Blend partially with an immersion blender. Or place half the soup in a high speed blender, blend, and add back to remainder of soup.
7. Garnish with cilantro and serve over rice.

Red Lentil Dip

Yield: 1 cup

1 cup red lentils
1/4 cup cornmeal
1 tbsp ground cumin
1/2 tsp cayenne
1 small onion, small dice
1/2 cup tomato sauce
3 tbsp sriracha
3 green onions finely sliced (green parts only)
1/4 cup parsley, finely chopped
salt and pepper

1. In a medium pot, combine lentils with 2 cups of water. Bring to a boil and simmer until lentils are soft and liquid is absorbed, about 15 minutes, stirring frequently.
2. Scrape hot lentils into a medium mixing bowl and mash together with the cornmeal until a smooth, uniform texture is achieved.
3. Add the cumin and cayenne and mix. Set aside.
4. In a small saute pan, over medium heat, cook the onion until soft and on the verge of turning brown.
5. Add the tomato sauce and sriracha and let simmer for a couple minutes to merge the flavours. Add to lentil mixture and stir to combine.
6. Allow to cool before folding in the herbs. Season the entire mixture to taste and serve.

Roast Potato, Asparagus, and Lentil Salad

Yield: 4-6 servings

Salad:
1 cup green lentils (or du Puy lentils)
2 medium yellow potatoes, diced
2 medium red potatoes, diced
2 bunches asparagus, ends broken off and chopped
1 shallot, thinly sliced
2 tbsp olive oil, separated
2 tbsp dill, chopped
salt and pepper

Dressing:
2 tbsp grainy mustard
2 tbsp dijon mustard
1/4 cup olive oil
3 tbsp lemon juice
salt and pepper

1. Preheat oven to 425F. Line two large baking sheets with parchment paper.
2. Place potatoes on one baking sheet and drizzle with 1 tablespoon oil. Toss to coat and sprinkle liberally with salt and pepper. Roast for 15 to 20 minutes, or until tender, turning once halfway through cooking. 
3. Place asparagus on the other baking sheet and drizzle with another tablespoon of oil. Sprinkle with salt and pepper. Roast for 7 to 10 minutes or until tender. 
4. Meanwhile, place lentils in a medium pot along with 3 cups of water. Bring to a boil and then reduce heat to medium-low and simmer about 15 to 20 minutes, or until tender. Be careful not to overcook. Drain and set aside.
5. In a large bowl, combine roasted vegetables with the lentils and gently toss to combine.
6. Prepare the dressing by whisking all of the dressing ingredients together. 
7. Pour half of the dressing onto the salad and toss to combine. Season with salt and pepper to taste. Serve the salad warm with a garnish of fresh dill, with the rest of the dressing served on the side.

Green Lentil and Squash Stew

Yield: 4-6 servings

1 tbsp olive oil
1 onion, small dice
1 carrot, small dice
1 celery, small dice
2 cloves garlic, finely minced
1 cup butternut squash, diced
1 tsp oregano
1/2 tsp chili powder
1/2 tsp chili flakes
salt and pepper
1 cup green lentils
1 can diced tomatoes
1/4 cup tomato paste
3 cups vegetable stock
1/2 cup zucchini, small dice
1 cup kale, roughly chopped
1 tsp lemon juice

1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
2. Add the carrot, celery, and garlic and continue to sauté for 5 more minutes.
3. Add the butternut squash and stir to coat.
4. Add the spices, lentils, diced tomatoes, tomato paste, and vegetable stock. Bring to a boil, reduce heat to medium-low, and simmer about 10 to 15 minutes, or until squash and lentils are starting to soften, but are still undercooked.
5. Add the zucchini and continue to simmer the soup for 5 minutes, until zucchini are starting to soften.
6. Add the kale and cook for 2 more minutes, until wilted.
7. Garnish with lemon juice just before serving.

Green Lentil, Yam, Mushroom, and Green Bean Curry

Yield: 4-6 servings

1 cup green lentils
1 tbsp coconut oil
1 tbsp cumin seeds
1 onion, finely chopped
3 cloves garlic, minced
1 knob ginger, grated
1 tsp garam masala
1 tsp turmeric
1/2 tsp ground fenugreek
1/2 tsp cayenne
salt and pepper
2 yams, peeled, cut into 1-inch pieces
2 tbsp chickpea flour
2 cups water
2 cups mushroom broth
1 cup whipping cream
8 crimini mushrooms, quartered
1 cup green beans, cut into 1-inch pieces
1/2 cup asparagus, cut into 1-inch pieces

1. In a medium pot, bring lentils to a boil in 4 cups of water. Reduce heat and simmer for 15 to 20 minutes, or until lentils are just tender. Drain, rinse in cold water to stop cooking process, and set aside.
2. Meanwhile, in a large pot, heat coconut oil over medium heat. Add cumin seeds and allow to sizzle for 10 to 15 seconds.
3. Add onions and saute until translucent, about 5 minutes.
4. Add the garlic, ginger, and spices. Saute for 1 minute.
5. Add the yams and cook, stirring, for 3 minutes. This is to coat the yams in oil and prevent them from becoming too mushy in the curry.
6. In a medium bowl, combine the chickpea flour and water. Whisk well. Add this mixture to the pot along with the mushroom broth and bring to a boil. Reduce heat to medium and simmer for 10 to 15 minutes. Yams should be nearly soft but still slightly undercooked.
7. Add cream, mushrooms, green beans, and asparagus. Continue to cook for 5 to 10 minutes until all vegetables are just cooked.
8. Add cooked lentils to the pot and stir to combine.

Red Lentil and Quinoa Fritters

Yield: 9 fritters

1/2 cup quinoa
1/4 cup red lentils
1 1/2 cup vegetable broth (or water)
1 tbsp tahini
1 tsp dijon mustard
juice of 1/2 lemon
2 tbsp parsley, finely chopped
2 tbsp cornmeal
2 tbsp chickpea flour (or brown rice flour)
1 tsp cumin
1 tsp turmeric
1/4 tsp cinnamon
1/4 tsp cayenne
salt and pepper

1. Preheat the oven to 400F. Line a baking sheet with parchment paper.
2. Place the quinoa and lentils in a medium pot with the vegetable broth. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and set aside to cool.
3. Once quinoa/lentil mixture has cooled a bit, transfer to a large mixing bowl. Add the remaining ingredients and stir well to combine. The mixture should easily come together to form patties.
4. Form patties and place on prepared baking sheet. Bake for 15 minutes. Flip and bake another 10 minutes.
5. Serve with a cucumber tomato salad and a tahini dressing.

Lentil Taco Meat

Yield: 4 servings

3/4 cup French green lentils
1 cup walnuts (use pumpkin seeds if nut-free)
1 clove garlic, finely minced
1 tsp dried oregano
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1 tbsp olive oil
1 tbsp water
1 tsp worcestershire sauce

1. In a medium pot, add lentils to 3 cups of water. Bring to a boil and simmer uncovered for 20 minutes or until lentils are tender. Drain lentils and rinse in cold water to stop the cooking process.
2. In a food processor, add lentils, walnuts, and garlic. Pulse until chopped. Do not want it to be pureed.
3. Transfer the mixture to a large bowl. Add the spices, oil, water, and worcestershire sauce. The mixture should be moist, not dry. If it is too dry, add a small amount of oil or water and stir again.
4. Use in the same way as regular taco meat.

Lentil Shepherd's Pie Filling

Yield: 4 servings

2 tbsp olive oil
1 onion, diced
1 leek, diced
4 cloves garlic, finely minced
6 crimini mushrooms, thinly sliced
1 cup vegetable broth
3 tbsp tomato paste
1/4 tsp red pepper flakes
1 tsp dried thyme
1 tsp dried rosemary
salt and pepper
1 cup green lentils, cooked
2 cups frozen mixed vegetables

1. In a large pot, heat the oil over medium heat. Add the onion and leek and a pinch of salt and saute until softened, about 3 to 5 minutes.
2. Add the garlic and mushrooms and cook for another 5 minutes until most of the liquid released from the mushrooms has cooked off.
3. Add the broth, tomato paste, and spices. Cook for another 5 minutes.
4. Add the cooked green lentils and the frozen vegetables. Bring to a boil and then simmer for 5 minutes to allow the flavours to meld together.

Lentil Salad with Roasted Carrots and Cumin

Yield: 3 servings

4 carrots
1 large shallot
1 tbsp fennel seeds
1 tbsp cumin seeds
1-2 tbsp olive oil
salt and pepper
3/4 cup French green lentils
1 tbsp olive oil
2 tsp ground coriander
2 tbsp cilantro, chopped
1 cup arugula
1/3 cup walnuts, chopped

1. Preheat oven to 350F. Line a baking tray with parchment paper.
2. Cut each carrot in half length-wise, and then slice on the diagonal.
3. Peel the shallots and chop into quarters.
4. Place carrots and shallots on prepared baking tray. Toss with fennel seeds, cumin seeds, olive oil, and salt and pepper. Roast for 30 minutes.
5. In the meantime, cook lentils in 2 cups of water for about 20 minutes. Drain and rinse in cold water to stop cooking.
6. To serve, in a large bowl, combine the cooked lentils, olive oil, ground coriander, chopped cilantro, arugula, walnuts, and the roasted vegetables.
7. Add some generous dollops of cashew cheese before serving.

Red Lentil Chili

Yield: 4-6 servings

2 tbsp coconut oil
1 small onion, diced
4 cloves garlic, finely minced
1 jalapeño, finely diced 
1 red pepper, diced
1/2 zucchini, diced
1/2 tsp salt
1/2 tsp pepper
3 tbsp chili powder
2 tbsp ground cumin
1 tsp smoked paprika
1 can diced tomatoes
3 tbsp tomato paste
1 tbsp maple syrup
1 1/2 - 2 cups water or stock
3/4 cup red lentils
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1/2 cup frozen corn


1. In a large pot, heat oil over medium heat. Once hot, add onion. Sauté for 3-4 minutes, stirring frequently.
2. Add garlic, jalapeño, red pepper, and zucchini, and season with salt and pepper.
3. Add the spices, diced tomatoes, tomato paste, maple syrup, and water/stock, and stir to combine. Bring to a low boil over medium high heat.
4. Once boiling, add lentils and reduce heat to medium-low. Gently simmer for about 15 minutes, or until lentils are mostly tender. If the mixture is looking too dry and lentils are not submerged, add more water/stock.
5. Add kidney beans, black beans, and corn, and stir to combine. Cook for 5 to 10 more minutes to allow flavors to meld together. Stir occassionally.
6. Serve as is, or garnished with fresh jalapeño, cilantro, red onion, and/or avocado (optional).
7. Store leftovers in the refrigerator up to 4 days, and in the freezer up to 1 month.
