Mustard Crusted Pork Tenderloin with Apple and Fennel

Servings: 2-3

1 tbsp grainy mustard
2 cloves garlic, minced
1 tsp fennel seeds
salt and pepper
1 pork tenderloin
1 tbsp olive oil
1 leek, chopped
1 fennel, sliced
1 apple, sliced
1 tsp thyme

1. Preheat the oven to 425F. Line a baking dish with parchment paper.
2. In a small bowl, combine grainy mustard, garlic, fennel seeds, and salt and pepper.
3. Place pork tenderloin in prepared baking dish. Evenly spread the mustard mixture over the tenderloin.
4. Roast tenderloin for about 30 minutes, or until just cooked through (145F on a meat thermometer).
5. While pork is roasting, heat olive oil in a skillet over medium heat.
6. Add leek and sauté for 1 minute. Season with salt and pepper.
7. Add fennel slices and sauté for 3 to 4 minutes, until slightly softened.
8. Add apple slices and cook another 3 to 4 minutes, until tender.
9. Add thyme and stir to combine.
10. Slice tenderloin and serve with sautéed vegetables.

Keema Madras (Lentil and Potato Curry)

Yield: 4 servings

1/3 cup red lentils
3/4 cup potatoes, cubed
salt and pepper
1/2 tsp cinnamon (or 1-inch cinnamon stick)
1 tsp fennel seeds
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp poppy seeds
1 tsp rice flour
1/2 tsp sage
1 tbsp coconut oil
1/2 onion, finely chopped
3 cloves garlic, finely chopped
6 curry leaves
2 medium tomatoes, diced
2 tbsp shredded coconut
1/3 cup walnuts, chopped
1/3 cup shredded carrots
garnish: cilantro, pepper flakes, lime juice

1. In a saucepan, add red lentils, potatoes, 2 cups water, and a good pinch of salt. Cook uncovered over medium heat until potatoes are tender, 12 to 15 minutes. Do not drain.
2. Heat a skillet over medium heat. Toast spices for 2 to 3 minutes.
3. Add onion, garlic, and curry leaves, and cook until translucent, stirring occasionally.
4. Meanwhile, blend the tomatoes with coconut and a few spoonfuls of water until smooth.
5. Add the blended tomato coconut mixture to the skillet and cook over medium until it thickens and oil starts to leave the mixture, 5 to 7 minutes.
6. Add the carrots and walnuts and cook for 2 minutes.
7. Add the cooked lentils and potatoes with the cooking liquid (should be about a half cup or so). Reduce heat to medium-low, cover and cook for 5 to 7 minutes.
8. Garnish with cilantro, pepper flakes, and lime juice. Serve with rice, flatbread or dosas.

Sweet Potato Salmon Hash

Yield: 4 servings

2 sweet potatoes
3 tbsp coconut oil, melted
1 leek, thinly sliced
1 fennel bulb, thinly sliced, fronds reserved
4 large brown mushrooms, thinly sliced
2 cloves garlic, minced
3/4-lb fillet wild sockeye salmon, skin on
1/2 small radicchio, thinly sliced into shreds
salt and pepper
zest of 1 lemon
2 tbsp chives, chopped
3 tbsp parsley, chopped
to serve: chopped fennel fronds, lemon juice

1. Start by steaming the sweet potatoes. Peel and chop into chunks, and steam for 15 to 20 minutes until tender (but not mushy). Place into a large bowl and mash.
2. In a large sauté pan, heat 2 tablespoons of the coconut oil. Add the leek, fennel and mushrooms. Sauté for 5 minutes until softened and lightly colored.
3. Add the garlic and sauté for a further minute.
4. Meanwhile, broil the salmon with the skin facing the heat source for 4 mins or until almost cooked but you are able to peel off the skin.
5. Add the cooked leek mixture, together with the radicchio, salt, and lemon zest to the mashed sweet potato. Mix to combine with a fork.
6. Remove the skin from the salmon, break the flesh into large pieces, and gently fold into the mixture, along with the chives and parsley. Be gentle to not break up the salmon too much.
7. Wipe out the sauté pan with a piece of absorbent paper, and heat the remaining tablespoon of coconut oil. Spoon in the hash mixture and lightly flatten the top. Cook on a medium heat for 8 minutes, then put under the broiler for a further 8-10 minutes until thoroughly heated through and browned on the top.
8. To serve: Top with the reserved fennel fronds and a big squeeze of lemon juice.

Braised Fennel and Shallots

Yield: 4-6 servings

2 large fennel bulbs
3 shallots
1/4 cup olive oil, divided
1 cup orange juice
1/2 tsp salt
2 tsp flat-leaf parsley, chopped
1 tsp orange zest

1. Trim the tops off the fennel bulbs, and slice away a small amount of the root end, just to remove any discolored surface. Cut the bulbs in half from root to stem, then slice the halves into wedges, being careful to keep some of the root end attached to each slice.
2. Slice off the top and bottom of each shallot, then slice from root to stem end, creating wedges of shallots.
3. In a large skillet, heat one tablespoon of olive oil over medium heat. Add a single layer of fennel slices and sear until lightly browned, about 2 minutes. Use tongs to flip the fennel, and brown on the other side for another 1 to 2 minutes. Transfer to a plate. Repeat with the remaining fennel and shallots, adding a tablespoon of oil to the pan each time. Transfer all vegetables to the plate as they are seared.
4. Return the skillet to the heat and add the orange juice. Use a spatula to scrape any browned bits off of the bottom of the pan. When the orange juice begins to simmer, add the seared shallots and fennel back to the pan. Sprinkle with salt and stir to coat. Cover the skillet and lower the heat slightly to medium-low. Cook until the vegetables are tender and orange juice has reduced to a glaze, about 15 minutes.
5. Transfer the braised vegetables to a serving platter. Sprinkle with parsley and orange zest and serve.

Tempeh and Potato Curry

Yield: 4 servings

8 oz tempeh
1 cup diced tomatoes
2 tbsp tomato paste
1 tbsp lime juice
1 tbsp coriander
1 tbsp sesame seeds
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp paprika
1/2 tsp red pepper flakes
1/4 tsp fenugreek
1/4 tsp garam masala
salt and pepper
1 tbsp coconut oil
1/2 medium onion, chopped
4 cloves garlic, minced
1/2-inch ginger, grated
1 potato, cubed
1 can coconut milk
cilantro and lemon for garnish

1. Steam the tempeh for 12 minutes. Set aside.
2. In a blender, combine tomato, tomato paste, lime juice, and all spices and seeds. Blend until smooth.
3. In a large pot, heat the oil over medium heat. Add onion, garlic, ginger, and a good pinch of salt, and cook until translucent.
4. Crumble the steamed tempeh and add to the pot. Cook for a minute to brown some edges.
5. Add the blended tomato and spice mixture. Mix well and cook over medium heat until the sauce is drying out and sticking to the tempeh (around 7 to 10 mins).
6. Add the potato and coconut milk. Mix well to incorporate, cover and cook for 15 minutes or until the potatoes are cooked through and the sauce has thickened a bit.
7. Garnish with cilantro and a dash of lemon. Serve with flatbread, naan, or rice.
8. The dish will keep in the refrigerator for up to 3 days.

Herb Frittata

Yield: 4 servings

8 eggs
salt and pepper, to taste
2 tbsp olive oil
1/2 cup leeks, thinly sliced
1/2 cup fennel, thinly sliced
1 clove garlic, minced
1 red bell pepper, diced
1 cup arugula (or spinach)
1/2 cup chopped fresh herbs (basil, dill, chives, chervil, tarragon, parsley)
1/2 cup smoked salmon

1. Preheat oven to 375F.
2. In a bowl, beat the eggs with salt and pepper. Set aside.
3. In a 8-inch oven-safe sauté pan, heat the oil over medium heat. Sauté the leeks and fennel for 2 minutes.
4. Add the garlic and bell pepper and continue to cook until vegetables are softened.
5. Add the arugula. Cook and stir until just wilted.
6. Pour the egg mixture into the pan. Using a heatproof rubber spatula, begin scraping the outside edges of the eggs into the middle of the pan, allowing more uncooked egg to pour to the outside rim. Continue moving the mixture in this manner until the eggs are about half way set.
7. Add the chopped herbs and quickly stir.
8. Place the pan in the oven and cook until the mixture is just firm through, about 6 to 7 minutes.
9. Slide the frittata out onto a serving dish and cut into wedges. Serve with smoked salmon.

Braised Chicken with Artichokes and Olives

Yield: 4-6 servings

2 kg chicken pieces
8 cloves garlic, thinly sliced
1 cup white wine
1/4 cup olive oil, divided
1 tsp thyme leaves
1 tbsp tomato paste
1 tsp herbes de Provence
1 tbsp fennel seeds
2 cups chicken stock
6 plum tomatoes, halved
1 stalk celery, finely diced
1 onion, diced
1 small jar artichoke hearts, drained
1/2 cup pitted green olives

1. In a large bowl, combine chicken with add the garlic, wine, 2 tbsp oil, and thyme. Season with salt and pepper, and mix until completely coated. Cover and chill for at least a few hours, but preferably overnight.
2. In a large Dutch oven, heat 1 tbsp oil over medium-high heat. Scrape marinade off the chicken pieces back into the bowl. Fry the chicken in batches until the skin is golden and crisp. Remove the chicken from the pan and pour off the oil.
3. Place the pan back on the heat, and add the tomato paste, herbs, fennel seeds, chicken stock, tomatoes, and remaining marinade. Bring to a boil, then simmer gently for 20 mins.
4. Preheat oven to 325F.
5. Nestle the chicken pieces back into the dish. Scatter over the celery, onions, and artichokes. Bring up to a simmer, pop the lid on, then transfer to the oven and cook for 1 hour.
6. Remove the lid and stir in the olives. Season to taste and leave everything to settle for 15 mins before serving straight from the dish.

Lasagna

Yield: 8 servings

Sauce:
1 tbsp olive oil
1 lb sweet (or hot) Italian sausage
1 lb lean ground beef (or ground turkey)
1 onion, finely chopped
5 cloves garlic, crushed
1 tsp fennel seeds
1 tsp dried basil
1 tsp dried oregano
salt and pepper
1 large can crushed tomatoes
1 can tomato paste
2 jars tomato sauce

Ricotta Mix:
1 1/2 cups ricotta
2 eggs
1/2 cup spinach, chopped
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
2 tbsp mozzarella, grated
1 clove garlic, minced
salt and pepper

To assemble:
1 pound lasagna noodles
2 cups spinach, chopped
1 lb mozzarella, grated
1 cup four cheese mix, grated
1/4 cup Parmesan, grated

1. In a large pot, heat olive oil over medium heat. Add meat and cook until completely cooked through. Set aside, but do not drain the fat.
2. Add onion and garlic and cook for 5 minutes, or until softened.
3. Add spices and stir. Cook for another minute.
4. Add crushed tomatoes, tomato paste, and tomato sauce. Stir well and bring to a simmer. Reduce heat to low and simmer for 1 to 3 hours, stirring occasionally.
5. Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 5 minutes, then drain and discard water. Noodles should be pliable but still crunchy inside.
6. In a small mixing bowl, combine ricotta with eggs, spinach, basil, parsley, mozzarella, garlic, salt, and pepper. Refrigerate until ready to assemble lasagna.
7. Preheat oven to 375F. Lightly grease a deep aluminum 9x13 roasting pan.
8. To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/2 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese and 1/2 the spinach. Place 4 noodles on top. Spoon 2 cups meat sauce over noodles. Place 4 noodles on top. Spread remaining ricotta mixture on top of noodles. Top with 1/4 of four cheese mix and remaining 1/2 of the spinach. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella, four cheese mix, and Parmesan cheese. Cover loosely with aluminum foil.
9. Bake in preheated oven for 45 minutes. Remove foil, and bake an additional 25 to 30 minutes. May need to broil at the end to allow cheese to brown. Serve hot.

Slow-Roasted Salmon with Fennel, Citrus, and Chile

Yield: 4 servings

1 medium fennel bulb, thinly sliced
1 blood or navel orange, thinly sliced, seeds removed
1 Meyer or regular lemon, thinly sliced, seeds removed
1 red Fresno chile or jalapeño, with seeds, thinly sliced
4 sprigs dill, plus more for serving
salt and pepper
2 lb skinless salmon fillet, preferably center-cut
1/4 cup olive oil
flaky sea salt (such as Maldon)

1. Preheat oven to 275F. Line a shallow baking dish with parchment paper.
2. Toss fennel, orange slices, lemon slices, chile, and 4 dill sprigs in prepared dish. Season with salt and pepper.
3. Season salmon with salt and place on top of fennel mixture.
4. Pour oil over.
5. Roast until salmon is just cooked through (the tip of a knife will slide through easily and flesh will be slightly opaque), 30 to 40 minutes for medium-rare.
6. Transfer salmon to a platter, breaking it into large pieces. Spoon fennel mixture and oil from baking dish. Discard dill sprigs. Season with Maldon salt and pepper, and top with fresh dill sprigs.

Fennel, Celery, and Apple Slaw

Yield: 4 servings

3 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp lemon juice
1/2 tsp maple syrup
1 tbsp tarragon, chopped
2 small fennel bulbs, thinly sliced
3 celery stalks, thinly sliced diagonally
1 firm, crisp apple (such as Pink Lady, Gala, or Granny Smith), julienned
salt and pepper

1. In a small bowl, whisk olive oil, apple cider vinegar, lemon juice, maple syrup, and tarragon together.
2. In a large bowl, combine sliced fennel, celery, and apple. Toss with dressing. Season to taste with salt and pepper.

Shaved Brussel Sprout Salad

Yield: 4 servings

1 pound Brussels sprouts, thinly sliced
1 tbsp olive oil
1/2 tsp salt
1 shallot, thinly sliced
1 bunch radishes, thinly sliced
1 small fennel bulb, thinly sliced
1 mandarin orange, segmented
zest and juice of 1/2 lemon
1 tbsp champagne vinegar
1 tsp ground ginger

1. In a large bowl, combine the sprouts, oil, and salt. Using your hands, massage the mixture for a few minutes, or until the toughest fibers begin to break down.
2. Add the shallot, radish, fennel, and orange to the bowl. Toss to combine.
3. In a small bowl, combine the lemon zest, juice, vinegar, and ginger powder. Whisk to combine. Add the to salad and toss to combine.

Turnip, Radish, and Fennel Saute

Yield: 4 servings

1 bunch baby turnips
1 bunch radishes
1 fennel bulb
1 tbsp coconut oil
zest and juice of 1 lemon
salt and pepper
1 tbsp fennel fronds, minced

1. Using a mandoline, thinly slice the turnips, radishes, and fennel bulb.
2. In a large skillet, heat the coconut oil over medium heat. Once hot, add the vegetables and cook for 5 to 7 minutes or until just soft.
3. Add the lemon zest and juice and season with salt and pepper. Toss to combine.
4. Garnish with fennel fronds and serve warm.

Kale, Fennel, Orange, and Pomegranate Salad

Yield: 2-3 servings

1 bunch dinosaur kale
1 tbsp olive oil
1 tbsp lemon juice
1/2 tsp salt
1 small fennel bulb, very thinly sliced
1 cup green cabbage, shredded 
1/4 cup green onion, chopped
1 orange, segmented
1 small beet, shredded
1/2 cup pomegranate arils

Dressing:
1/2 shallot, finely minced
zest and juice of 1 lemon
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp honey
salt and pepper

1. Wash, dry, and remove the center ribs from the kale. Cut it into thin julienne strips.
2. In a large mixing bowl, combine kale with olive oil, lemon juice, and salt. Massage it with your hands for 3 minutes, or until bright green and pliable.
3. To the bowl, add fennel, cabbage, and green onion, and mix well.
4. Top with orange segments, beet, and pomegranate arils.
5. To prepare dressing, combine all ingredients in a small jar and shake vigorously to emulsify.
6. Drizzle salad with dressing and serve.

Herb Vegetable Soup

Yield: 4-6 servings

2 tbsp olive oil
1 onion, chopped
1/2 cup celery, chopped
1/2 cup fennel, chopped
1 clove garlic, minced
1 cup zucchini, chopped
1 cup yellow squash, chopped
1 cup broccoli, chopped
1 cup cauliflower, chopped
3 cups vegetable stock
1 cup spinach
1/4 cup parsley
salt and pepper
1 tsp dill, chopped

1. In a large pot, heat the olive oil over medium heat. Add onion, celery, and fennel, and saute for 5 to 8 minutes, or until softened.
2. Add garlic, zucchini, yellow squash, broccoli, cauliflower, and vegetable stock. Let simmer for 10 minutes, until all vegetables have softened.
3. Add spinach and parsley and let wilt for 1 minute.
4. Pour into a high speed blender and puree until smooth. Season to taste with salt and pepper, and garnish with dill before serving.

Roasted Fennel and Quinoa Salad

Yield: 3-4 servings

3/4 cup quinoa
1 1/2 cups water
1 small bulb of fennel, trimmed, halved, core removed
4 radishes, halved, sliced thin
1/2 cucumber, diced small
2 tbsp dill, chopped
2 green onions, sliced thin
optional: handful of nuts/seeds
2 tsp dijon mustard
juice of 1 lemon
3 tbsp olive oil
salt and pepper

1. Preheat the oven to 400F. Line a baking sheet with parchment paper.
2. In a medium pot, combine quinoa with water. Bring to a boil, cover, and reduce heat to low. Simmer until all of the liquid is absorbed, about 15 minutes. Remove from heat and set aside.
3. Slice the halves of fennel and toss them in a bit of olive oil, salt, and pepper. Spread on prepared baking sheet and roast in the oven for about 15 minutes, or until soft and have golden, caramelized edges. (Or optional: grill the fennel: brush the fennel with olive oil and season with salt and pepper. Place on a grill heated to high, cut side down. Grill until char marks are achieved on both sides and fennel feels a bit soft. Remove and cut into a rough small dice once cool.)
4. Place cooled quinoa into a large bowl. Add fennel, radishes, cucumber, dill, and green onion. Add dijon, lemon juice and remaining olive oil on top. Season with salt and pepper and mix until thoroughly combined.

Quinoa and Fennel Salad

Yield: 6 servings

1 cup quinoa
4 tbsp olive oil
2 fennel bulbs, trimmed and sliced thinly
1 tbsp sugar or honey
3 tbsp apple cider vinegar
1/2 tsp salt
1/2 cup edamame beans
1 green chile, seeded and finely chopped
1 1/2 tsp ground cumin
1/2 cup mint, chopped
1/2 cup dill, chopped
1/2 cup cilantro, chopped
2 tbsp dried cranberries
2 tbsp pumpkin seeds
2 limes, segmented plus juice

1. Cook quinoa as directed on package. Let cool.
2. Over medium-high heat, pour 2 tbsp of olive oil into a large saute pan.
3. Add fennel and sear for 2 minutes, stirring once, to get some colour.
4. Turn down heat to medium and cook for another 10 minutes until fennel is completely soft.
5. Add sugar/honey, vinegar, and salt and cook for another 2 minutes. Remove from heat.
6. Combine quinoa, fennel, edamame, chile, cumin, herbs, cranberries, pumpkin seeds, limes, and remaining 2 tbsp of olive oil.
