Sautéed Broccoli and Carrots

Yield: 2-3 servings

1 tbsp olive oil
1 large shallot, sliced
2 cups carrots, cut into bite-sized pieces
1 head broccoli, cut into florets
1 jalapeno pepper, finely diced
2 cloves garlic, finely minced
1 tbsp parsley, chopped
1/4 tsp red pepper flakes
1/2 tsp paprika
salt and pepper

1. In a sauté pan, heat olive oil over medium heat. Add the shallot, carrots, and broccoli to the pan. Sauté for 4 to 5 minutes.
2. Add the jalapeno and garlic. Cooking for 2 to 3 more minutes until the carrots become tender.
3. Add the parsley and spices, and season with salt and pepper.
