Jamaican Sauteed Cabbage

Yield: 6 servings

1 tbsp olive oil
1/2 onion, chopped
2 cloves garlic, minced
1/2 head green cabbage, thinly sliced
1 carrot, shredded or thinly sliced
1/2 red bell pepper, chopped
1/2 tsp thyme
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 cup water (or vegetable broth)

1. In a large skillet, heat oil on medium high heat. Saute onion and garlic for 3 minutes.
2. Add cabbage and carrots and stir well. Cook for another 3 minutes.
3. Add bell pepper, thyme, red pepper flakes, salt, and water. Cover and cook for about 10 minutes stirring occasionally.
