Pumpkin Muffins

Yield: 12

1 cup pumpkin puree
1/2 cup maple syrup
1/4 cup coconut oil, melted
2 eggs
1/4 cup almond milk (or any milk)
1 tsp vanilla extract
1 cup all-purpose flour
3/4 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp salt
optional: 1/3 cup chocolate chips

1. Preheat oven to 350F. Line a muffin tin with liners.
2. In a large bowl, mix together pumpkin, maple syrup, coconut oil, eggs, almond milk, and vanilla.
3. In a separate large bowl, whisk together the flours, baking soda, spices, and salt.
4. Add dry ingredients to wet ingredients and mix until just combined.
5. Fold in the chocolate chips, if using.
6. Evenly divide batter between 12 muffin cups. Bake for 23 to 28 minutes, or until tester comes out clean or with just a few crumbs attached.

Banana Walnut Chocolate Chip Cookies

Yield: 24

2 cups almond flour
1 tsp baking powder
1/4 tsp salt
1/3 cup chocolate chips
1/2 cup walnuts, chopped
1 ripe banana, mashed
1/3 cup almond milk
1/4 cup almond butter
1 tbsp coconut oil, melted
1 tbsp maple syrup

1. Preheat the oven to 350F. Line 2 baking sheets with parchment paper.
2. In a medium bowl, combine the almond flour, baking powder, salt, chocolate chips, and walnuts. Stir to combine.
3. In a separate large bowl, combine the remaining ingredients. Stir to combine.
4. Fold the dry ingredients into the wet, and mix to combine.
5. Using a tablespoon, spoon cookies onto prepared baking sheets.
6. Bake until golden brown, about 15 minutes.

Pumpkin Pie Bars

Yield: 8x8 pan

Crust:
1/4 cup coconut oil, melted
1/3 cup coconut sugar
1 egg
1 tsp vanilla extract
1 cup almond flour
2 tbsp coconut flour
1/4 tsp baking soda
1/4 tsp salt

Filling:
1 can pumpkin puree (15 ounces)
2 eggs
1/4 cup unsweetened almond milk (or coconut milk)
1/4 cup maple syrup
1/4 cup coconut sugar
1 tsp vanilla extract
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/4 tsp allspice or cloves

1. Preheat oven to 350F. Line an 8x8 baking pan with parchment paper.
2. Prepare the crust first. In the bowl of a food processor, add in coconut oil, sugar, egg, and vanilla extract. Process until well combined.
3. Add almond flour, coconut flour, baking soda, and salt. Process until a dough forms. Allow dough to rest for 5 minutes.
4. Add dough to the prepared baking pan. Use your hands to spread the dough evenly towards the edges.
5. Bake for 9 minutes. Remove from oven and set aside to cool for a 3-5 minutes.
6. To make the filling, in a large bowl, mix together all filling ingredients until smooth.
7. Pour over the crust, and tap gently on the counter to remove any air bubbles.
8. Bake for 45 to 50 minutes until set and filling no longer jiggles.
9. Remove and allow to cool completely at room temperature. Cover with plastic wrap and transfer to the fridge to cool for at least 6 hours or overnight.
10. Cut into 12 bars and serve with whipped cream or powdered sugar. Store bars in fridge for up to 5 days.

Banana Blueberry Muffins

Yield: 12 muffins

3/4 cup almond flour
3/4 cup coconut flour
6 tbsp tapioca flour
6 tbsp granulated monk fruit sweetener (or granulated stevia)
1 1/2 tbsp cinnamon
1 1/2 tsp baking soda
3/4 tsp salt
3 eggs
1/2 cup coconut oil
3 tbsp almond milk
1 1/2 tsp vanilla extract
1 tsp apple cider vinegar
1 1/2 cup banana, mashed (about 3 large)
1 1/2 cups fresh (or frozen) blueberries

1. Preheat the oven to 350F. Line a cupcake pan with liners.
2. In a large mixing bowl, whisk together the dry ingredients (almond flour through salt).
3. In a medium mixing bowl, whisk the eggs, oil, milk, vanilla, and vinegar.
4. Stir the mashed banana into the wet ingredients.
5. Fold the blueberries into the dry ingredients until they are lightly coated.
6. Pour the wet ingredients into the dry/blueberry mixture and gently stir to combine, being careful not to crush the blueberries.
7. Divide the batter evenly between the prepared cupcake compartments.
8. Bake for 30 to 40 minutes, or until a tester comes out clean.
9. Transfer muffins to a wire rack to cool partially before serving or completely before storing.

Blueberry Oatmeal Muffins

Yield: 12

1 1/2 cup oat flour
1 1/3 cup almond flour
1/3 tsp salt
1 tsp baking soda
3 eggs, slightly beaten
1/2 cup pure maple syrup
1 tsp vanilla extract
2/3 cup unsweetened almond milk (or dairy free milk or choice)
1 1/2 tbsp olive oil
1 tbsp apple cider vinegar (or fresh lemon juice)
1 1/3 cup fresh or frozen blueberries

1. Preheat oven to 350F. Line a muffin tray with liners.
2. In a large bowl, whisk together oat flour, almond flour, salt, and baking soda.
3. In a separate large bowl, mix together eggs, maple syrup, vanilla, almond milk, olive oil, and apple cider vinegar until smooth and well combined.
4. Add dry ingredients to wet ingredients and stir until just combined.
5. Gently fold blueberries into the batter.
6. Divide batter evenly between muffin cups, filling 3/4 of the way full. Bake for 18 to 25 minutes, or until toothpick inserted in the center comes out clean.
7. Transfer pan to a wire rack to cool for 10 minutes then remove muffins from pan and place on wire rack to cool completely.

Almond Squares

Yield: 6 servings

3 eggs
3 tbsp almond milk
1/3 cup butter
1/3 cup xylitol
1 tbsp lemon juice
1 tsp vanilla extract
1 tsp almond extract
2 cups almond flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 tbsp sliced almonds

1. Preheat the oven to 340F. Line a loaf pan with parchment paper.
2. Add the eggs, almond milk, butter, xylitol, lemon juice, vanilla extract, and almond extract to a food processor. Blend to combine.
3. Add the almond flour, cinnamon, baking soda, and salt, and blend until you have a smooth and creamy batter.
4. Pour the batter into the prepared pan and bake for 35 minutes.
5. Remove cake from the oven and scatter the sliced almonds over the surface.
6. Return to the oven for a further 5 to 10 minutes or until the cake is cooked through (a toothpick inserted in the center should come out clean). Leave the cake to cool completely in the pan.
7. Cut into squares to serve.

Raspberry, Orange, and Almond Baked Oatmeal

Yield: 6-8 servings

2 1/2 cups rolled oats
1/3 cup coconut sugar
1 tsp cinnamon
1/4 tsp allspice
pinch of salt
1 tsp baking powder
1 1/2 cups almond milk (or sub any kind of milk)
1 egg
1 tsp vanilla extract
1 tsp almond extract
1 orange, peeled, segmented, and chopped into small chunks
1 cup raspberries
1/4 cup sliced almonds

1. Preheat the oven to 350F. Line an 8x8 inch square pan with parchment paper.
2. In a large bowl, combine oats, sugar, spices, salt, and baking powder. Stir to combine.
3. In a separate bowl, combine milk, egg, vanilla, and almond extract, and whisk lightly to combine.
4. Pour the milk mixture into the oat mixture and stir gently until well combined.
5. Add in the chunks of orange and raspberries and gently stir.
6. Pour mixture into the prepared pan and smooth into a level layer.
7. Top with the sliced almonds.
8. Bake for 25 to 30 minutes, until golden, the milk is absorbed, and it feels slightly firm to the touch.
9. Leave to cool in the pan for at least 15 minutes.
10. Baked oatmeal can be served cold or re-heated in the oven or microwave. Store in an airtight container in the fridge for 3 to 4 days.

Chocolate Chip Muffins (stevia)

Yield: 12

2 1/2 cups all-purpose flour (or whole wheat flour)
1/4 cup powdered stevia
1 tbsp baking powder
1 tsp baking soda
pinch salt
1/4 cup coconut oil, melted
1/4 cup applesauce
2 eggs
1 cup almond milk
2 tbsp maple syrup
1 tbsp vanilla extract
1/4 cup chocolate chips

1. Preheat oven to 375F. Line a muffin pan with paper liners.
2. In a large mixing bowl, combine flour, stevia, baking powder, baking soda, and, salt. Whisk to combine.
3. In a separate mixing bowl, add the coconut oil, applesauce, eggs, almond milk, maple syrup, and vanilla extract. Whisk well.
4. Add the wet ingredients to the dry ingredients and whisk until combined.
5. Gently fold in chocolate chips.
6. Evenly distribute batter between muffin cups, filling them about 3/4 of the way full.
7. Bake for 15 to 18 minutes, until a toothpick comes out clean.

Coconut Matcha Muffins

Yield: 12

1/2 cup coconut flour
1/2 cup almond flour
1/2 tsp salt
1/2 tsp baking soda
3 tbsp matcha green tea powder
1/4 cup coconut sugar
3 eggs
1 egg white
1 tbsp maple syrup
1/2 cup unsweetened almond milk
2 tsp vanilla extract
1/2 cup shredded coconut
1/4 cup coconut oil, melted

1. Preheat oven to 350F. Line a 12 cup standard muffin tin with non-stick liners.
2. In a small bowl, whisk together the flours, salt, baking soda, matcha powder, shredded coconut, and coconut sugar.
3. In a separate, larger bowl, beat the wet ingredients until frothy.
4. Pour the dry ingredients into the wet and stir to combine.
5. Spoon the mixture equally into tins and bake for 20 to 22 minutes. Muffins are done when a toothpick inserted into the center, comes out clean.

Coconut Blondies (Sugar-Free)

Yield: 8x8 baking pan

6 eggs
1/2 cup almond milk, unsweetened
1/2 cup coconut oil, melted
1 tbsp vanilla extract
1 cup coconut flour
2 tsp baking powder
1/4 cup granulated sweetener
optional: handful of cacao nibs or chopped dark chocolate (85% cocoa)
handful of shredded coconut

1. Preheat the oven to 350F. Line an 8x8 baking pan with parchment paper.
2. In a large bowl, whisk together eggs, almond milk, coconut oil, and vanilla extract.
3. Add the dry ingredients - coconut flour, baking powder, and sweetener. Mix until just combined and the batter is smooth.
4. If using chocolate, gently fold in the chopped pieces, reserving a few tablespoons for sprinkling on top if desired.
5. Sprinkle the shredded coconut on top.
6. Bake for 20 to 22 minutes, or until edges are golden brown and a knife comes out with a few crumbs attached. Do not over-bake.
7. Cool on a wire rack for at least 10 minutes. Cut into 16 squares.

Chocolate Almond Butter Cookies (Sugar-Free)

Yield: 12

1 cup almond butter
4 tbsp cocoa powder
1/2 cup granulated sweetener (erythritol or monkfruit)
1 egg
3 tbsp almond milk, if needed
1/4 cup (sugar free) chocolate chips

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a bowl, mix almond butter, cocoa powder, granulated sweetener, and the egg with a fork until well-combined.
3. If the mix is crumbly, thin it with almond milk. Start with one tablespoon and add up to three tablespoons if needed. The batter should look fudgy and soft, but not runny.
4. Add chocolate chips and stir to combine.
5. Roll dough into balls and press them into cookies. Place on the prepared baking sheet.
6. Bake 10 to 12 minutes until the tops of the cookies begin to show little cracks. They will be very soft when straight out of the oven. Let them cool completely before handling.

Blueberry Yogurt Muffins

Yield: 12

1 cup plain Greek yogurt
1/4 cup coconut oil, melted and cooled (or melted butter or olive oil)
1 egg
1/2 cup maple syrup
1 tsp vanilla extract
1/4 tsp almond extract, optional
1 tbsp almond milk
1 3/4 cups whole wheat pastry flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 1/2 cups fresh blueberries
optional: 1/2 cup chopped walnuts

1. Preheat oven to 425F. Line a muffin tin with muffin liners.
2. In a large bowl, mix together the greek yogurt, oil, egg, maple syrup, vanilla extract, almond extract, and almond milk until smooth.
3. Add in whole wheat flour, baking soda, cinnamon, and salt. Mix until just combined.
4. Fold in blueberries (and walnuts if using).
5. Divide batter evenly into liners, filling 3/4 of the way full. Bake for 5 minutes, then reduce heat to 375F. Bake for 10 to 15 minutes more, or until toothpick comes out clean or with just a few crumbs attached.

Orange Loaf

Yield: 1 loaf

1 1/2 cups almond flour
1/3 cup coconut flour
1 tsp baking soda
1/4 tsp salt
2 eggs
1/4 cup coconut oil, melted and cooled
1/3 cup maple syrup
zest of 1 large orange
1/2 cup freshly squeezed orange juice
1/4 cup unsweetened almond milk

1. Preheat oven to 350F. Line an 8x4 inch loaf pan with parchment paper.
2. In a large bowl, whisk together dry ingredients.
3. In a separate large bowl, whisk together wet ingredients.
4. Add dry ingredients to wet ingredients and mix well to combine.
5. Pour batter into loaf pan and spread out evenly. Bake for 40-45 minutes until tester comes out clean.
6. Allow loaf to cool completely in the pan before removing.

Coconut Flour Pumpkin Bars

Yield: 8x8 pan

1 cup pumpkin puree
1/4 cup maple syrup
1 tsp vanilla extract
1/4 cup almond butter (or nut butter of choice)
1 tbsp unsweetened almond milk
2 eggs
1/2 cup coconut flour
3/4 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/8 tsp cloves
1/3 cup dark chocolate chips

1. Preheat oven to 350F. Line an 8x8-inch baking pan with parchment paper.
2. To a large bowl, add pumpkin puree, maple syrup, vanilla extract, almond butter, almond milk, and eggs. Mix until well combined.
3. Add coconut flour, baking soda, salt, and spices. Stir to combine.
4. Gently fold in chocolate chips.
5. Spread batter evenly in prepared pan, and bake for 20 to 25 minutes or until toothpick comes out clean in the middle. Transfer pan to a wire rack to cool.
6. Cut into 12 bars.

Almond Flour Pancakes

Yield: 2-3 servings (6 pancakes)

2 eggs
1/3 cup coconut milk (or almond milk)
1 tsp vanilla extract
1 1/4 cup almond flour
1/4 tsp baking soda
pinch salt
olive oil, coconut oil, or butter, for greasing pan
optional: 1/2 cup blueberries, fresh or frozen
optional: 1/4 cup mini chocolate chips

1. In large bowl, mix eggs, coconut milk, and vanilla together until smooth and well combined.
2. Add in almond flour, baking soda, and salt. Stir until well combined. Add any optional ingredients, if using, and stir again.
3. Place a nonstick skillet over medium-low heat and lightly coat with olive oil, coconut oil, or butter.
4. Drop a 1/4-cup of batter onto pan. Cook until bubbles appear on top and the edges are well cooked. Flip cakes and cook until golden brown on underside, about 2 minutes.
5. Wipe skillet clean and repeat with more oil/butter and remaining batter.

Almond Butter and Coconut Flour Pancakes

Yield: 6 pancakes

1/4 cup coconut flour
1/4 tsp baking soda
2 tbsp almond butter
2 eggs, slightly beaten
2 tsp honey or maple syrup
1/2 medium banana, mashed
1/4 cup almond milk

1. In large bowl, whisk together coconut flour and baking soda. Set aside.
2. In a medium bowl, mix together almond butter, eggs, honey, banana, and almond milk until smooth and well combined.
3. Add wet ingredients to flour mixture and mix together. Batter should be thick like a brownie batter.
4. In a large nonstick pan, heat a small amount of butter or coconut oil over medium-low heat (coconut flour is sensitive to burning so medium-low heat is best). Drop about 3 tablespoons of batter onto the pan. Cook until bubbles appear on top and the edges are well cooked, about 2 to 3 minutes.  Flip cakes and cook until golden brown on underside, about 2 minutes.

Mushroom and Arugula Quiche

Yield: 9" round or 6 servings

Crust:
2 cups almond flour
2 cloves garlic, minced
1 tbsp fresh thyme, minced
1/2 tsp salt
1/4 tsp black pepper
1/3 cup olive oil
1 tbsp water

Filling:
1 tbsp olive oil
1 cup crimini mushrooms, sliced
2 cups arugula, roughly chopped
6 large eggs
1/3 cup almond milk
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes
1/4 cup goat cheese, crumbled (optional)

1. Preheat oven to 375F. Line a 9″ pie pan with parchment paper.
2. In a mixing bowl, stir together the almond flour, garlic, thyme, salt ,and pepper. Pour in the olive oil and water and stir until the mixture is thoroughly combined.
3. Press the dough into prepared pan until evenly dispersed across the bottom and at least 1-inch up the sides.
4. Bake until the crust is lightly golden and firm to the touch, about 15 minutes.
5. In a large skillet over medium heat, warm olive oil. Cook the mushrooms, stirring often, until tender. Toss in the arugula and let it wilt, while stirring, about 30 seconds. Transfer the mixture to a plate to cool.
6. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and red pepper flakes. Stir in the goat cheese (if using) and the slightly cooled mushroom and arugula mixture.
7. Once the crust is done baking, pour in the egg mixture. Bake for 30 minutes, or until the center is firm to the touch and cooked through. Let the quiche cool for at least 5 to 10 minutes before slicing with a sharp knife. Serve immediately.

Buckwheat Pancakes

Yield: 10

1 banana, mashed
2 eggs, whisked
1 3/4 almond milk
1 tsp almond extract
1 1/2 light buckwheat flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tbsp coconut oil

Topping:
1/2 cup blueberries (fresh or frozen)
1 tbsp water
1 tbsp maple syrup

1. In a medium bowl, combine banana, eggs, almond milk, and almond extract.
2. In a large bowl, whisk together buckwheat flour, baking powder, and salt.
3. Stir wet ingredients into dry ingredients. Let rest for a few minutes.
4. In a large skillet, melt coconut oil over medium heat. Pour about 1/4 cup batter into the pan for each pancake. Cook for 2 to 3 minutes, until soft bubbles form on top, then flip and cook for another minute or two.
5. While the pancakes are cooking, in a small pot, combine blueberries, water, and maple syrup over medium heat. Using a fork, press down on the blueberries to break some of them open and release the juices. Heat until just warm.
6. Spoon blueberries over pancakes and top with maple syrup.

Creamy Balsamic and Mushroom Pasta

Yield: 4 servings

2 cups shell pasta
2 tbsp butter (or olive oil)
1 large shallot, finely diced
2 cloves garlic, finely minced
1 cup button mushrooms, washed and sliced
1/2 cup balsamic vinegar
1 cup almond milk
2 tbsp oregano
2 tbsp flour (or 1 tbsp arrowroot powder)
salt and pepper, to taste

1. Boil a large pot of water and cook the pasta. Set aside.
2. In a large saucepan, heat the butter over medium heat. Add the shallots and sauté for 2 to 3 minutes, stirring frequently.
3. Add the garlic and mushrooms. Continue to cook over medium-low heat for 5 minutes.
4. Add the flour. Stir to coat all the mushrooms.
5. Add the balsamic vinegar and almond milk. Reduce heat to low heat, mix well, and let simmer.
6. When the sauce begin to thicken slightly, add the oregano, salt, and pepper.
7. Add the cooked pasta and toss to coat in the sauce.
