Banana Coconut Muffins

Yield: 12 muffins

3/4 cup overripe bananas (about 2), mashed
1/2 cup coconut oil, melted
2/3 cup sugar
1 egg
1 tsp vanilla extract
1 cup flour
1/4 cup almond flour
1 tsp baking powder
1/4 tsp salt
1 cup coconut
1/4 cup chocolate chips
1/4 cup walnuts or pecans, chopped

1. Preheat the oven to 350F. Line a cupcake pan with liners.
2. In a large mixing bowl, whisk together the bananas, coconut oil, sugar, egg, and vanilla until well combined.
3. Add the flour, baking powder, and salt. Stir until flour is just moistened.
4. Add coconut, chocolate chips, and nuts.
5. Divide the batter between 12 muffin cups.
6. Optional: Top with additional coconut.
7. Bake for 20 to 22 minutes, or until a tester comes out clean.
8. Transfer muffins to a wire rack to cool partially before serving or completely before storing.

Double Chocolate Banana Bread

Yield: 1 loaf

3 ripe bananas
1/2 cup butter, melted
3/4 cup brown sugar
1 egg
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt
1 cup all-purpose flour
1/2 cup cocoa powder
1/2 cup chocolate chips/chunks

1. Preheat oven to 350F. Line a loaf pan with parchment paper.
2. In a large mixing bowl, mash bananas (should be just over 1 cup of mashed banana).
3. Whisk in melted butter, then brown sugar, egg, and vanilla.
4. Place baking soda, salt, flour, and cocoa powder in a sifter and sift over wet ingredients. Stir together until just combined.
5. Stir in chocolate chunks or chips.
6. Pour into the tin and bake for about 55 to 65 mins until a skewer comes out clean.

Banana Oat Pancakes

Yield: 6-8 pancakes (18 mini pancakes)

2 ripe bananas, mashed
2 eggs
1/2 cup oat milk
1 tsp vanilla extract
1 1/2 cup oats
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
coconut oil for cooking

1. Add all of the ingredients to a blender. Blend on high until completely smooth, about 30 seconds to 1 minute.
2. Heat a large non-stick pan over medium-low heat. Add a teaspoon of coconut oil to cover the bottom of the pan.
3. Once pan is hot, add 1/3 cup of the batter to the pan and cook for 2-4 minutes until pancakes slightly puff up and there are a few bubbles along the edges.
4. Flip cakes and cook until golden brown on underside.
5. Top with maple syrup, fruit, or coconut whip.

Banana Bread (Chickpea Flour)

Yield: 1 loaf

2-3 very ripe bananas, mashed
1/4 cup maple syrup (or honey)
2 eggs
1/3 cup coconut oil, melted
1 tsp vanilla extract
1 tsp apple cider vinegar
1 1/2 cup chickpea flour
optional: 1/2 cup shredded coconut
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/3 cup chocolate chips
optional: 1/3 cup walnuts, chopped

1. Preheat oven to 350F. Line a loaf pan with parchment paper.
2. In a large bowl, combine bananas, maple syrup, eggs, coconut oil, vanilla extract, and apple cider vinegar. Mix until well combined and creamy.
3. In a separate bowl, whisk together chickpea flour, shredded coconut (if using), baking soda, cinnamon and salt.
4. Add dry ingredients to wet ingredients and mix until just combined.
5. Fold chocolate chips and walnuts (if using) into the batter.
6. Pour batter into the prepared pan and bake for 45 to 55 minutes or until a tester comes out clean. Allow the cake to cool completely.

Chia, Quinoa, and Banana Granola Bars

Yield: 10-12 bars

1 cup rolled oats
1/2 cup uncooked quinoa
2 tbsp chia seeds
1/2 tsp salt
1 tsp ground cinnamon
1 large ripe banana
1 tsp vanilla extract
1/4 cup chopped pecans
1/4 cup chopped almonds
1/4 cup dried fruit (eg raisins, cranberries, etc)
1/4 cup almond butter
2 tbsp maple syrup (or honey)

1. Preheat oven to 350F. Line an 8x8 inch baking pan with parchment paper.
2. In a large bowl, combine oats, uncooked quinoa, chia seeds, salt and cinnamon. Stir to combine.
3. Stir in mashed banana and vanilla.
4. Add in almonds, pecans, and dried fruit.
5. Add in almond butter and maple syrup and stir until well combined.
6. Pour into prepared baking pan and press down firmly to help bars stay together. Bake for 25 minutes or until edges turn golden brown.
7. Allow to cool completely before cutting into 10 to 12 bars.

Banana Walnut Chocolate Chip Cookies

Yield: 24

2 cups almond flour
1 tsp baking powder
1/4 tsp salt
1/3 cup chocolate chips
1/2 cup walnuts, chopped
1 ripe banana, mashed
1/3 cup almond milk
1/4 cup almond butter
1 tbsp coconut oil, melted
1 tbsp maple syrup

1. Preheat the oven to 350F. Line 2 baking sheets with parchment paper.
2. In a medium bowl, combine the almond flour, baking powder, salt, chocolate chips, and walnuts. Stir to combine.
3. In a separate large bowl, combine the remaining ingredients. Stir to combine.
4. Fold the dry ingredients into the wet, and mix to combine.
5. Using a tablespoon, spoon cookies onto prepared baking sheets.
6. Bake until golden brown, about 15 minutes.

Banana Bread

Yield: 1 loaf

140g butter, softened
140g sugar
2 eggs
1 cup + 2 tbsp all-purpose flour
2 tsp baking powder
1/4 tsp salt
2 ripe bananas, mashed

1. Preheat oven to 350F. Line a loaf pan with parchment paper.
2. In a large mixing bowl, cream butter and sugar until light and fluffy.
3. Add eggs one at a time, with a little of the flour.
4. Fold in the remaining flour, baking powder, salt, and bananas.
5. Pour into the tin and bake for about 50 mins until a skewer comes out clean.

Banana Pancakes

Yield: 6-8 pancakes

2 flax eggs
3 ripe bananas, mashed
1 tsp baking soda
1 tsp vanilla extract
2/3 cup coconut flour
1/4 cup coconut milk
coconut oil for cooking

1. In a small bowl, make 2 flax eggs. Let rest for a few minutes.
2. In a large bowl, mash bananas until no large chunks remain.
3. Add all ingredients to the bananas including flax eggs and mix well.
4. Heat a large non-stick pan over medium-low heat. Add a teaspoon of coconut oil to cover the bottom of the pan.
5. Add a generous spoonful of batter into the hot pan and flatten as much as possible. Cook until golden brown, about 2 minutes on each side. Keep the batter amount small so that it’s easier to flip these delicate pancakes. Repeat until the batter is finished.
6. Top with maple syrup, fruit, or coconut whip.

Banana Bread (Sugar-Free)

Yield: 1 loaf

3 eggs
1/2 cup mashed banana (1 large banana, very ripe)
2 tbsp butter, melted
1 1/2 cups almond flour
1/4 cup swerve
2 tsp cinnamon
1 tsp baking powder
1/4 cup walnuts, crushed

1. Preheat the oven to 350F. Line a loaf pan with parchment paper.
2. Using an electric mixer, beat the eggs together with the mashed banana and melted butter until smooth.
3. In another bowl, stir together the dry ingredients (almond flour, swerve, cinnamon, and baking powder).
4. Add dry ingredients to the egg/banana mixture and stir until combined.
5. Stir in the crushed walnuts, reserving some to sprinkle over the top of the bread.
6. Fill the prepared pan with batter. Sprinkle the leftover walnuts on top.
7. Bake for about 40 minutes or until a knife inserted comes out clean. If the top is already brown enough, loosely place aluminium foil over it so it does not burn.
8. Let the banana bread cool completely before slicing.

Banana Bread

Yield: 1 loaf

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup sugar
4 very ripe bananas
1 tsp vanilla
1/2 cup coconut oil
1 tsp cinnamon

1. Preheat the oven to 350F. Line a 9-by-5-inch loaf pan with parchment paper.
2. In a medium bowl, combine the flour, baking soda, baking powder, and salt. Set aside.
3. In a large bowl, cream together the eggs and sugar.
4. Stir in the mashed bananas, vanilla, oil, and cinnamon.
5. Stir in the flour mixture, a third at a time, until just combined.

Banana Zucchini Muffins

Yield: 12 muffins

1 1/4 cup shredded zucchini (from 1 medium zucchini)
1 cup mashed banana (from 2 bananas)
3/4 cup cashew butter
1/4 cup maple syrup
2 eggs
1 tsp vanilla extract
2/3 cup coconut flour
1 tsp baking soda
1/4 tsp salt

1. Preheat oven to 350F. Line a muffin tin with muffin liners.
2. Squeeze shredded zucchini of excess moisture with a paper towel.
3. In a large bowl, add zucchini, banana, cashew butter, maple syrup, eggs, and vanilla. Mix until smooth and well combined.
4. Add the dry ingredients (coconut flour, baking soda, and salt) to the wet ingredients. Mix until combined.
5. Divide batter evenly between muffin cups. Bake for 22 to 27 minutes, or until toothpick comes out clean.

Banana Blueberry Muffins

Yield: 12 muffins

3/4 cup almond flour
3/4 cup coconut flour
6 tbsp tapioca flour
6 tbsp granulated monk fruit sweetener (or granulated stevia)
1 1/2 tbsp cinnamon
1 1/2 tsp baking soda
3/4 tsp salt
3 eggs
1/2 cup coconut oil
3 tbsp almond milk
1 1/2 tsp vanilla extract
1 tsp apple cider vinegar
1 1/2 cup banana, mashed (about 3 large)
1 1/2 cups fresh (or frozen) blueberries

1. Preheat the oven to 350F. Line a cupcake pan with liners.
2. In a large mixing bowl, whisk together the dry ingredients (almond flour through salt).
3. In a medium mixing bowl, whisk the eggs, oil, milk, vanilla, and vinegar.
4. Stir the mashed banana into the wet ingredients.
5. Fold the blueberries into the dry ingredients until they are lightly coated.
6. Pour the wet ingredients into the dry/blueberry mixture and gently stir to combine, being careful not to crush the blueberries.
7. Divide the batter evenly between the prepared cupcake compartments.
8. Bake for 30 to 40 minutes, or until a tester comes out clean.

Banana Coconut Bites

Yield: 15

3 ripe banana, mashed
3 tbsp coconut oil
3/4 cup canned coconut milk
1 tbsp water
2 tbsp coconut manna
1 cup coconut flour
1 tbsp vanilla extract
1 tbsp ground cinnamon
pinch salt

1. Preheat the oven to 350F. Line a baking sheet with parchment paper.
2. Mix all the ingredients in a large bowl.
3. Spoon 1-inch drops of the dough onto prepared baking sheet. Bake for about 12 minutes.

Coconut Flour Banana Bread

Yield: 1 loaf

4 very ripe bananas, mashed (about 1 1/2 to 1 3/4 cups)
3/4 cup coconut flour
5 eggs
1/4 cup coconut sugar
1 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract

1. Preheat the oven to 350F. Line a 9x5-inch loaf pan with parchment paper.
2. In a large bowl, mash the bananas with a fork.
3. To the mashed banana, add in the coconut flour, eggs, coconut sugar, cinnamon, baking soda, salt, and vanilla. Stir the batter well, breaking up any lumps so a smooth batter is formed.
4. Pour batter into lined loaf pan and bake until the center of the loaf has risen and started to crack, feeling firm to the touch, about 45 to 55 minutes. Cool completely before slicing and serving.
5. Because this loaf is moist, be sure to store it in an airtight container in the fridge for best shelf life. It should last at least a week when stored in the fridge.

Almond Butter and Coconut Flour Pancakes

Yield: 6 pancakes

1/4 cup coconut flour
1/4 tsp baking soda
2 tbsp almond butter
2 eggs, slightly beaten
2 tsp honey or maple syrup
1/2 medium banana, mashed
1/4 cup almond milk

1. In large bowl, whisk together coconut flour and baking soda. Set aside.
2. In a medium bowl, mix together almond butter, eggs, honey, banana, and almond milk until smooth and well combined.
3. Add wet ingredients to flour mixture and mix together. Batter should be thick like a brownie batter.
4. In a large nonstick pan, heat a small amount of butter or coconut oil over medium-low heat (coconut flour is sensitive to burning so medium-low heat is best). Drop about 3 tablespoons of batter onto the pan. Cook until bubbles appear on top and the edges are well cooked, about 2 to 3 minutes.  Flip cakes and cook until golden brown on underside, about 2 minutes.

Buckwheat Pancakes

Yield: 10

1 banana, mashed
2 eggs, whisked
1 3/4 almond milk
1 tsp almond extract
1 1/2 light buckwheat flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tbsp coconut oil

Topping:
1/2 cup blueberries (fresh or frozen)
1 tbsp water
1 tbsp maple syrup

1. In a medium bowl, combine banana, eggs, almond milk, and almond extract.
2. In a large bowl, whisk together buckwheat flour, baking powder, and salt.
3. Stir wet ingredients into dry ingredients. Let rest for a few minutes.
4. In a large skillet, melt coconut oil over medium heat. Pour about 1/4 cup batter into the pan for each pancake. Cook for 2 to 3 minutes, until soft bubbles form on top, then flip and cook for another minute or two.
5. While the pancakes are cooking, in a small pot, combine blueberries, water, and maple syrup over medium heat. Using a fork, press down on the blueberries to break some of them open and release the juices. Heat until just warm.
6. Spoon blueberries over pancakes and top with maple syrup.

Oatmeal Banana Cookies (Sugar-Free)

Yield: 16

3 tbsp ground flaxseed
1/2 cup water
2 ripe bananas
1/2 cup coconut oil, melted
1 tsp vanilla extract
2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 3/4 cups rolled oats
1/2 cup oat flour
1/2 cup mixed nuts and/or seeds
1/2 cup raisins (or cranberries)

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a small bowl, whisk flaxseed and water together. Let sit for about 5 minutes.
3. In a large bowl, mash bananas.
4. Add coconut oil, vanilla, cinnamon, baking soda and salt.
5. Add flaxseed mixture and whisk well.
6. Add oats and oat flour. Stir to combine.
7. Add nuts and dried fruit. Stir to combine.
8. Using a large spoon, scoop batter and place on prepared baking sheet. Shape into cookies and flatten slightly.
9. Bake for 20 minutes or until nuts start to brown. Remove from the oven and let cookies cool for a few minutes, then transfer onto a cooling rack to cool off completely.

Apple Cinnamon Cookies

Yield: 15

1 banana, mashed
1/2 cup apple, shredded
1/3 cup coconut flour
2 tbsp almond butter
1 tbsp honey
2 tsp vanilla
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger powder
pinch of sea salt

Banana Almond Butter Cookies

Yield: 15

1 1/4 cup almond meal
2 large, overripe bananas
1/4 cup almond butter (or sub other nut butter)
1/4 cup chocolate chips (optional)

1. Preheat the oven to 350F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine almond meal, bananas, and almond milk. Mix until fully combined.
3. Add chocolate chips, if using, and stir to combine. 
4. Using a scoop or your hands, form into small balls and transfer to the prepared baking sheet. Press each cookie down firmly.
5. Bake for 11 to 13 minutes, until golden brown on top. Do not overcook.
6. Remove from oven and allow to cool on sheet for 5 minutes before transferring to a cooling rack.

Coconut Almond Quinoa Pancakes

Yield: 6 pancakes

1/2 tbsp + 2 tbsp coconut oil, divided, melted, plus extra for the pan
1/2 tsp cinnamon
1/2 cup quinoa
7/8 cup water
1 tbsp lemon juice
1 cup almond or coconut milk of your choice
1 1/2 cups almond flour
1/2 cup whole spelt flour (or gluten-free all-purpose flour)
2 tsp baking powder
1/2 tsp baking soda
2 tbsp coconut sugar
1/2 tsp salt
1 egg
2 tsp vanilla extract
optional: 2 bananas, sliced
optional: 2 tbsp cacao nibs or chocolate chips
optional: 1 cup blueberries

1. In a small pot, over medium heat, add 1/2 tablespoon of the coconut oil. Once warm, add the cinnamon and stir. Add the quinoa and stir around in the oil to lightly toast. Add the water and bring to a boil. Cover, reduce heat to low, and simmer for about 15 minutes until quinoa is cooked, but kind of crunchy. Let cool quinoa completely.
2. In a small bowl, add the lemon juice to the milk. Set aside to curdle for at least 5 minutes. 
3. In a medium bowl, combine the almond flour, spelt flour, baking powder, baking soda, coconut sugar, and salt. Stir to combine.
4. Add the curdled milk mixture, egg, vanilla, and remaining 2 tablespoons of coconut oil to the flour mixture. Gently fold it together with a spatula until just combined.
5. Add the cooled quinoa and fold it in until evenly mixed.
6. Heat a medium non-stick pan over medium heat. Brush with melted coconut oil. Drop 2 to 3 tablespoons of batter onto the pan and spread/flatten it out. If using, press banana slices onto the top of the cakes, and/or sprinkle with cacao nibs/chocolate chips/blueberries. Once bubbles start to form on top and the bottom is golden, flip them over. Continue to cook until bottom side is golden/dry.
7. Repeat with remaining batter, keeping cooked cakes warm.
8. Serve pancakes with maple syrup and yogurt dolloped on top.
