Peanut Butter Granola Bars

Yield: 1 8x8 dish

1 cup peanut butter
2/3 cup honey
1 tsp vanilla
1/2 tsp salt
2 1/2 cups rolled oats
1/3 cup chocolate chips
3 tbsp pumpkin seeds

1. Line an 8x8 baking pan with parchment paper.
2. In a large bowl, combine peanut butter, honey, vanilla, and salt, and stir until smooth.
3. Add oats, chocolate chips, and pumpkin seeds. The mixture might seem dry at first, but it will come together.
4. Transfer to a prepared baking pan and press down until flat. Use a second piece of parchment paper and the back of a measuring cup to help flatten the mixture.
5. Chill for at least 1 hour.
6. Slice into bars. Store bars in fridge.

Carrot Muffins

Yield: 12 mini muffins

1/2 cup applesauce
3/8 cup flour (or whole wheat flour)
1/4 cup oats
1 egg
2 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 tbsp coconut oil, melted (or butter)
1/2 cup grated carrots

1. Preheat oven to 350F. Grease a mini muffin pan and set aside.
2. In a medium bowl, combine all ingredients.
3. Scoop out tablespoon-sized portions into prepared muffin pan.
4. Bake for 10 to 12 minutes or until a toothpick comes out clean.
5. Let cool in the pan for 5 minutes and transfer to a wire rack to finish cooling. Let the muffins cool completely before serving.

Apple Oatmeal Cookies

Yield: 12

1/2 cup unsweetenend applesauce
2 tbsp peanut butter
2 tbsp maple syrup
1 cup large flake oats
1/2 tsp cinnamon
1/2 medium apple, peeled, cored, grated (largest hole on the grater)

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the applesauce, maple syrup, and peanut butter until smooth.
3. Add in oats and cinnamon. Mix until well combined.
4. Fold the grated apple into the mixture until combined.
5. Scoop tablespoon-sized portions and place them prepared baking sheet. Flatten and shape the cookies because they will not change shape while baking.
6. Form dough into balls and arrange on prepared baking sheets allowing space for the cookies to expand. Sprinkle the tops of each with a few flecks of sea salt.
7. Bake cookies for 10 to 12 minutes, until just turning golden.
8. Let cool completely before serving.

Apple Cinnamon Baked Oatmeal

Yield: 6-8 servings

1 1/2 cups rolled oats
1/2 tsp baking powder
1/2 tsp cinnamon
2/3 cups almond milk (or sub any kind of milk)
1/4 cup unsweetened applesauce
1 tbsp maple syrup
1 egg
1 small apple, peeled, cored, and chopped into small chunks

1. Preheat the oven to 350F. Line an 8x8 inch square pan with parchment paper.
2. In a large bowl, combine oats, baking powder, and cinnamon. Stir to combine.
3. In a separate bowl, combine milk, applesauce, maple syrup, and egg, and whisk lightly to combine.
4. Pour the milk mixture into the oat mixture and stir gently until well combined. Let the oats soak up the wet ingredients while you prepare the apple.
5. Add in the apple and gently stir to combine.
6. Pour mixture into the prepared pan and smooth into a level layer.
7. Bake for 15 minutes, until the milk is absorbed and it feels slightly firm to the touch.
8. Leave to cool in the pan for at least 15 minutes.
10. Baked oatmeal can be served cold or re-heated in the oven or microwave. Store in an airtight container in the fridge for 3 to 4 days or freeze for 3 months (warm up in microwave for 30 seconds). Can also be baked as mini-muffins.

Aussie Bites

Yield: 2 dozen
1 3/4 cup rolled oats
1/4 cup sugar
1/4 cup dates (or dried apricots)
1/4 cup dried cranberries (or raisins)
1/4 cup ground flaxseed
1/4 cup sunflower seeds
1/4 cup shredded coconut
1/4 cup quinoa (cooked or raw)
2 tbsp chia seeds
1/4 cup mini chocolate chips
1/4 tsp baking soda
1/4 cup honey
1/4 cup butter, melted
1/4 cup coconut oil, melted
1/2 tsp vanilla

1. Preheat oven to 350F. Lightly grease or line two mini muffin trays.
2. In the bowl of a food processor, place 1 cup of oats. Process for about 1 minute until oats are pulverized into oat flour.
3. Add in the remaining 3/4 cup rolled oats, sugar, dates, dried cranberries, flax seed, sunflower seeds, coconut, quinoa, chia seeds, and baking soda. Pulse until dried fruits are in small bits.
4. Pour in honey, melted butter, canola oil, and vanilla extract. Pulse just until combined.
5. Divide batter among the prepared muffin tins.
6. Bake for 10 to 12 minutes, until golden brown.
7. Once completely cooled, remove from pan and store in an airtight container for 4 to 5 days.

Breakfast Cookies (Beyond Nourished)

Yield: 2 dozen

1 1/4 cup old-fashioned oats
1/4 cup almond flour
1/3 cup pecans, chopped
1/4 cup sliced almonds
1/2 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup sesame seeds
3 tbsp chia seeds
1/4 cup shredded coconut
1/4 cup dried fruit
1/4 cup chocolate chips
1 tsp cinnamon
1/4 tsp salt
1/2 cup maple syrup
1/3 cup nut butter
1/2 tsp vanilla
1 egg (or flax egg)

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine all dry ingredients together.
3. In another bowl, combine all wet ingredients together.
4. Combine the wet and dry ingredients. Mix well.
5. Let sit for 15 to 30 minutes.
6. Scoop 1/4 cup portions onto prepared baking sheet and flatten slightly.
7. Bake for 10 to 12 minutes, or until golden brown on the bottom.

Peanut Butter Cookie Bar

Yield: 8x8 pan

2 eggs
1 cup coconut sugar (or half brown sugar)
3/4 cup peanut butter
1/4 cup coconut oil, melted
1 tsp vanilla
1 cup almond flour
1/2 cup rolled oats
1/2 tsp baking soda
1/4 tsp salt
1/3 cup chocolate chips

1. Preheat oven to 350F. Line a 8x8 baking pan with parchment paper.
2. In a large bowl, combine eggs, coconut sugar, and peanut butter. Mix well.
3. Add coconut oil and vanilla and mix together until smooth.
4. Add almond flour, oats, baking soda, and salt. Mix thoroughly until all ingredients are combined.
5. Add chocolate chips. Stir to combine.
6. Bake for 20 minutes.

Banana Oat Pancakes

Yield: 6-8 pancakes (18 mini pancakes)

2 ripe bananas, mashed
2 eggs
1/2 cup oat milk
1 tsp vanilla extract
1 1/2 cup oats
2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
coconut oil for cooking

1. Add all of the ingredients to a blender. Blend on high until completely smooth, about 30 seconds to 1 minute.
2. Heat a large non-stick pan over medium-low heat. Add a teaspoon of coconut oil to cover the bottom of the pan.
3. Once pan is hot, add 1/3 cup of the batter to the pan and cook for 2-4 minutes until pancakes slightly puff up and there are a few bubbles along the edges.
4. Flip cakes and cook until golden brown on underside.
5. Top with maple syrup, fruit, or coconut whip.

Coconut Overnight Oats

Servings: 1

1 cup coconut milk
1 tbsp maple syrup
1 tsp vanilla extract
1/3 cup rolled oats
2 tbsp dried fruit
1 tsp chia seeds
2 tsp ground flax
1/2 tsp cinnamon
pinch of salt
1 tbsp coconut flakes
optional: fresh fruit

1. In a medium bowl, combine coconut milk, maple syrup, and vanilla. Stir to combine.
2. In a second bowl, combine oats, dried fruit, chia, flax, cinnamon, and salt. Stir to combine.
3. Pour liquid ingredients into the dry ingredients. Stir to combine.
4. Optional: place into a jar or serving container.
5. Refrigerate overnight.
6. Top with coconut flakes and fresh fruit, if using.

Apple Tahini Caramel Oatmeal

Servings: 2-3

2 cups water
1 cup rolled oats
pinch salt
1 tbsp butter (or coconut oil)
1-2 apples, diced into 1-cm pieces
3 tbsp maple syrup
1 tbsp tahini
1 tsp vanilla extract
optional: 2-3 tbsp hemp seeds
cinnamon, to taste
1/4 cup pecans or walnuts, chopped

1. Bring water to a boil in a small pot. Add oats and a pinch of salt and turn down to medium low. Cover and simmer until oats reach desired consistency, about 8-10 minutes.
2. Meanwhile, heat butter in a medium nonstick pan over medium heat. Add apples and cook for 3 to 4 minutes. Apples should be warm and just starting to soften.
3. Add the maple syrup, tahini, vanilla, and a pinch of salt to the apples. Stir and let bubble for 2 to 3 minutes until the caramel thickens and darkens a little bit.
4. When the oatmeal is done, stir in hemp hearts if using and cinnamon.
5. Portion oatmeal into 2 or 3 bowls. Top with caramel apples, cinnamon, and chopped nuts.

Chia, Quinoa, and Banana Granola Bars

Yield: 10-12 bars

1 cup rolled oats
1/2 cup uncooked quinoa
2 tbsp chia seeds
1/2 tsp salt
1 tsp ground cinnamon
1 large ripe banana
1 tsp vanilla extract
1/4 cup chopped pecans
1/4 cup chopped almonds
1/4 cup dried fruit (eg raisins, cranberries, etc)
1/4 cup almond butter
2 tbsp maple syrup (or honey)

1. Preheat oven to 350F. Line an 8x8 inch baking pan with parchment paper.
2. In a large bowl, combine oats, uncooked quinoa, chia seeds, salt and cinnamon. Stir to combine.
3. Stir in mashed banana and vanilla.
4. Add in almonds, pecans, and dried fruit.
5. Add in almond butter and maple syrup and stir until well combined.
6. Pour into prepared baking pan and press down firmly to help bars stay together. Bake for 25 minutes or until edges turn golden brown.
7. Allow to cool completely before cutting into 10 to 12 bars.

Peanut Butter Cookies (No-Bake)

Yield: 12

1 cup rolled oats
1 pinch salt
3/4 cup medjool dates
1/2 cup natural salted peanut butter

1. Add oats and salt to a food processor and process into a flour.
2. Add dates and blend for 30 seconds more or until finely chopped.
3. Add peanut butter and blend until a dough forms.
4. Scoop out 1-tablespoon amounts of dough and carefully form into cookies. Place on a parchment-lined pan or tray.
5. Use the back of a fork to create a cross hatch on the top of the cookies.
6. Store leftovers in the refrigerator for up to 1 week or in the freezer up to 1 month.

Peanut Butter Granola Bars (with dates)

Yield: 1 8x8 dish

1 1/2 cups packed pitted dates
1/2 cup peanut butter
1/2 cup rolled oats

1. If your dates are not sticky and moist, soak in warm water for 10 minutes and then drain. Otherwise, proceed to step 2.
2. Add dates to a food processor and pulse until only small bits remain. You want the dates to clump into a ball.
3. Add peanut butter and oats and pulse a few more times until incorporated, stirring and scraping down sides as needed.
4. Transfer to a parchment-lined 8x8 dish and press down until flat. Transfer to freezer to set.
5. Slice into 8-10 bars and store in the fridge or freezer to keep fresh. 
6. Will keep in the fridge for several weeks and in the freezer for up to a couple months or more.

Chocolate Chunk Oatmeal Cookies

Yield: 24

1 1/4 cup oats
1 1/3 cup all-purpose flour
1 tsp baking soda
1/4 tsp salt
1 cup butter
3/4 cup dark brown sugar
2 eggs
2 tsp vanilla extract
3/4 cup shredded coconut
3.5 oz semi-sweet 70% chocolate, coarsely chopped

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In large bowl, whisk together oats, flour, baking soda, and salt. Set aside.
3. In bowl of an electric mixer, beat butter and brown sugar together until smooth.
4. Add in eggs and vanilla. Beat again for 2 minutes or until smooth.
5. Add oat mixture to the wet ingredients, mixing until well combined.
6. Gently add in coconut and chocolate chunks.
7. Drop dough with cookie scoop or by large rounded tablespoons onto prepared sheet. Bake for 9 to 11 minutes, or until edges just begin to turn a golden brown.
8. Remove from oven and let cool a few minutes on baking sheet. Transfer to wire rack to finish cooling.

Raspberry, Orange, and Almond Baked Oatmeal

Yield: 6-8 servings

2 1/2 cups rolled oats
1/3 cup coconut sugar
1 tsp cinnamon
1/4 tsp allspice
pinch of salt
1 tsp baking powder
1 1/2 cups almond milk (or sub any kind of milk)
1 egg
1 tsp vanilla extract
1 tsp almond extract
1 orange, peeled, segmented, and chopped into small chunks
1 cup raspberries
1/4 cup sliced almonds

1. Preheat the oven to 350F. Line an 8x8 inch square pan with parchment paper.
2. In a large bowl, combine oats, sugar, spices, salt, and baking powder. Stir to combine.
3. In a separate bowl, combine milk, egg, vanilla, and almond extract, and whisk lightly to combine.
4. Pour the milk mixture into the oat mixture and stir gently until well combined.
5. Add in the chunks of orange and raspberries and gently stir.
6. Pour mixture into the prepared pan and smooth into a level layer.
7. Top with the sliced almonds.
8. Bake for 25 to 30 minutes, until golden, the milk is absorbed, and it feels slightly firm to the touch.
9. Leave to cool in the pan for at least 15 minutes.

Lemon Bars

Yield: 8x8 pan

Filling:
1 cup cashews
1 cup coconut cream
2 tbsp arrowroot or cornstarch
1/2 cup lemon juice
1 tbsp lemon zest
pinch salt
1/4 cup maple syrup
2 tbsp icing sugar

Crust:
1 cup oats
1 cup almonds
1/4 tsp salt
2 tbsp coconut sugar
1 tbsp maple syrup
4-5 tbsp coconut oil, melted

1. Add cashews to a small bowl and cover with boiling hot water. Let soak for 1 hour, then drain thoroughly.
2. In the meantime, preheat oven to 350F. Line an 8x8 inch baking dish with parchment paper.
3. Add oats, almonds, salt, and coconut sugar to a high speed blender and mix on high until a fine meal is achieved.
4. Transfer to a medium mixing bowl and add maple syrup and coconut oil, starting with lesser end of range. Stir with a spoon to combine until a loose dough is formed. You should be able to squeeze the mixture between two fingers and form a dough instead of it crumbling. If too dry, add a bit more melted coconut oil.
5. Transfer mixture to prepared dish and spread evenly. Press down firmly until evenly distributed and well packed.
6. Bake for 15 minutes, then increase heat to 375F and bake for 5 to 8 minutes more, or until the edges are golden brown and there is some browning on the surface. Remove from oven to cool slightly, then reduce oven heat to 350F.
7. Once cashews are soaked and drained, add to a high speed blender with coconut cream, arrowroot starch, lemon juice, lemon zest, salt, and maple syrup. Mix on high until very creamy and smooth.
8. Pour filling over the pre-baked crust and spread into an even layer. Tap on counter to remove any air bubbles.
9. Bake for 20 to 23 minutes or until the edges look very slightly dry and the center appears jiggly but not liquidy.
10. Let rest for 10 minutes, then transfer to refrigerator to let cool completely (uncovered) for at least 4 hours, preferably overnight.
11. To serve, slice and sift with icing sugar (optional). Store leftovers in the refrigerator, covered, up to 4 days, though best within the first 2 days.

Pumpkin Oat Bars

Yield: 16 bars

3 cups oats
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
pinch ground cloves
1 cup canned pumpkin
1/2 cup unsweetened applesauce
1/2 cup coconut sugar
1 tbsp olive or coconut oil
2 tsp vanilla extract
1/3 cup chocolate chips, plus 2 tablespoons for sprinkling on top

1. Preheat oven to 350F. Line a 9-inch baking pan with parchment paper.
2. Place oats into a high-speed blender. Blend for 15 to 30 seconds, or until oats resemble flour. Measure out 2 1/2 cups of the oat flour.
3. In a medium bowl, add oat flour, baking powder, baking soda, salt, and spices. Set aside.
4. In a separate large bowl, whisk together pumpkin, applesauce, coconut sugar, oil, and vanilla extract until smooth and creamy.
5. Slowly add oat flour mixture to wet ingredients and mix until just combined.
6. Gently fold in 1/3 cup of chocolate chips.
7. Pour batter into prepared pan and sprinkle remaining chocolate chips on top. Bake for 15 to 20 minutes or until knife inserted into center comes out clean or with just a few crumbs attached.
8. Cool for 15 minutes on wire rack. Cut into 16 slices.

Pumpkin Spice Energy Balls

Yield: 16

1/4 cup almonds
2 dates
1 cup oats
1/4 cup shredded coconut
1/4 cup pumpkin puree
2 tbsp almond flour
1 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp allspice
1/4 tsp ground ginger
1/4 tsp salt

1. In a food processor, pulse almonds until only small pieces remain. Remove and set aside in a bowl.
2. Add dates to the food processor and pulse until small pieces remain.
3. Add oats, coconut, pumpkin, almond flour, maple syrup, cinnamon, allspice, ginger, and salt to the food processor. Pulse until just combined.
4. Add chopped almonds. Pulse again until mixed together.
5. Using your hands, roll into bite-sized balls. Store in refrigerator until ready to eat.

Strawberry Rhubarb Crumble Bar

Yield: 8x8 pan

Crust:
1 cup rolled oats
1 cup almonds
4 medjool dates, pitted
3 tbsp coconut sugar
2 tbsp unsweetened shredded coconut
1/4 tsp cinnamon
1/4 tsp salt
5 tbsp coconut oil, melted

Filling:
2 cups rhubarb, chopped into 1/2 inch pieces
1 cup strawberries, chopped into 1/2 inch pieces
1/4 cup orange juice
2 tbsp maple syrup
1 tbsp chia seeds

Crumble Topping:
3 tbsp coconut sugar
2 tbsp almond flour
1/4 cup rolled oats
1/4 tsp cinnamon
1 1/2 tbsp coconut oil

1. Preheat oven to 350F. Line an 8x8-inch baking dish with parchment paper.
2. Add oats, almonds, dates, coconut sugar, coconut, cinnamon, and salt to a food processor or high-speed blender and pulse into a fine meal, making sure no large pieces remain.
3. Add melted coconut oil and pulse to incorporate. It should form a loose dough that forms when squeezed between two fingers. Add more melted oil if too dry.
4. Spread the mixture into the lined baking dish and press down into an even layer with your fingers or a flat object (such as a drinking glass).
5. Bake for 15 to 20 minutes, until the crust is fragrant and the edges are slightly golden brown. Set aside.
6. In the meantime, add rhubarb, strawberries, orange juice, and maple syrup to a medium saucepan. Cook over medium heat until slightly softened and bubbly, about 5 to 10 minutes. Stir frequently to prevent sticking. In the last minute of cooking, add the chia seeds and stir to ensure all the chia seeds are evenly distributed. Remove from heat and set aside.
7. Prepare crumble by adding all ingredients to a small mixing bowl and using a fork or your fingers to mix ingredients into a crumble. Set aside.
8. Spoon the strawberry-rhubarb mixture over the pre-baked crust and spread into an even layer. Top with crumble topping and spread evenly to cover fruit.
9. Return pan to the oven and bake for another 15 to 20 minutes or until the fruit is warm and bubbly and the crumble is golden brown.
10. Remove from oven and let cool completely, at least 1 hour. Once cooled, gently lift bars from pan and slice into squares or bars.
11. Store leftovers in a well-sealed container at room temperature for 2 days, in the refrigerator for 3-4 days, or the freezer up to 1 month.

Oatmeal Raisin Cookies

Yield: 15

3/4 cup almond flour
3/4 cup rolled oats
1/3 cup coconut sugar
1/4 cup shredded coconut
1/4 cup raisins (or chocolate chips)
3/4 tsp baking powder
1/4 tsp salt
1 egg (or 1/4 cup aquafaba)
2 tbsp almond butter (or other nut/seed butter)
3 tbsp coconut oil, melted
1/2 tsp vanilla extract

1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, stir together almond flour, oats, sugar, coconut, raisins, baking powder, and salt.
3. In a separate bowl, beat egg (or aquafaba) using a handheld mixer or by whisking vigorously until light and fluffy and loose peaks have formed. (If not whipping, add a little cream of tartar to help them along.)
4. To the egg (aquafaba), add the almond butter, oil, and vanilla. Whisk to combine.
5. Add to dry ingredients and mix until combined. The dough should be firm and semi-tacky. (Optional: cover and chill in the refrigerator for at least 30 minutes or overnight.)
6. Scoop dough into roughly 2 tablespoon amounts and form into small discs. Place on prepared baking sheet with about a 1-inch gap to allow for spreading. 
7. Bake for 10 to 12 minutes or until the edges are slightly golden brown. 
8. Remove from oven and let cool for 5 minutes. 
9. Store leftovers in a loosely sealed container at room temperature up to 3 days, in the refrigerator for 4 days, or in the freezer for 1 month. Storing them in the freezer once cooked will help the retain their crispy exterior.
