Watermelon Cucumber Quinoa Salad

Yield: 4 servings

1/2 cup quinoa
1 cup water
1 small watermelon, skin removed and chopped
1 medium cucumber, chopped
juice from 2 limes
1/4 cup fresh mint, chopped
salt and pepper
1/4 cup feta, crumbled (optional)

1. Cook quinoa in water until all the water is absorbed, about 15 minutes. Remove from heat and cool.
2. When quinoa is cool, combine with all remaining ingredients.
