Almond Coconut Chocolate Chip Cookies

Yield: 15

1 1/4 cups almond meal
1/2 cup shredded unsweetened coconut
3 tbsp coconut sugar
1/4 cup chocolate chips
1/2 tsp baking powder
1/4 tsp salt 
1 egg
3 tbsp coconut oil, melted
3 tbsp honey
1/2 tsp vanilla extract
1/2 tsp almond extract

1. In a large mixing bowl, stir together almond meal, coconut, coconut sugar, chocolate chips, coconut, baking powder, and salt.
2. In a separate bowl, whisk the egg until uniform in colour and doubled in volume.
3. Whisk in the coconut oil, honey, vanilla, and almond extract.
4. Add wet ingredients to dry ingredients and mix until just combined.
5. Chill in the fridge for at least 30 minutes or even overnight.
6. Preheat oven to 350F. Line a baking sheet with parchment paper. 
7. Shape dough into 1-inch ball and place on prepared baking sheet with 1-1/2 inch space in between each. Press down slightly to flatten a bit.
8. Bake until edges begin to brown, 7-10 minutes.
9. Remove from oven and let cool before serving.
