Avocado Chimichurri

Yield: 1 1/2 cups

1 cup finely chopped parsley
2 cloves garlic, finely minced
1 shallot, finely diced
1/4 tsp red pepper flake 
3 tbsp olive oil
3 tbsp lemon juice
salt and pepper, to taste
1 small ripe avocado, cubed

1. In a medium mixing bowl, combine all ingredients except avocado. Whisk to combine.
2. Add avocado and toss to combine.
