Piri Piri Sauce

Yield: 3/4 cup sauce (enough for 4 chicken breasts)

1/2 small red onion (or 2 shallots), roughly chopped
3 cloves garlic
1 small red pepper, seeded, roughly chopped
1 red chili pepper
1 tsp paprika
1/2 tsp dried oregano
juice and zest of 1 lemon
1/4 cup parsley
1/4 cup cilantro
2 tsp red wine vinegar
1 tbsp olive oil
1 tsp salt
1/2 tsp pepper

1. Combine all ingredients in blender and blend until as smooth as possible.
2. Marinate meat with 2/3 of the sauce, leave 1/3 aside for serving.
